Zesty Lemon Muffins with a Curdy Twist
A triple dose of lemon goodness—these muffins are filled with zest, juice, and topped with the creamiest homemade lemon curd 🍋🍋🍋.
Ingredients
2½ cups flour
3/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
3 eggs
1/2 cup melted butter
1/2 cup milk
1/4 cup lemon juice
Zest of 2 lemons
1/2 cup homemade lemon curd
Method
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
Whisk together flour, sugar, baking powder, and salt in a large bowl.
In another bowl, beat eggs with melted butter, milk, lemon juice, and zest.
Fold the wet mixture into the dry until just combined.
Spoon the batter into muffin tins and add a dollop of lemon curd on top of each muffin.
Bake for 18–22 minutes or until golden brown.
