I made these tiny pancakes for my tiny girls. Thank you Stella for pouring the syrup and always being game to be in one of my videos

These Baby Superhero Pancakes were gobbled up quickly. Make them bite sized for your little ones or pile the stack high for yourself. They are packed with fiber and protein-filled ingredients but still taste great. This recipe has been an easy substitute for the unhealthy store-bought pancake brands. 👍

Ingredients:
1 Cup White Whole Wheat Flour
1/4 Cup Almond Flour
1/4 Cup Coconut Flour
1/4 tsp Sea Salt
1 tsp Baking Powder
½ tsp Vanilla Powder
1 Egg large, well beaten
1 Cup Milk
1 Tbsp Melted Butter
Instructions

Mix, Mix Mix or as my girls say “mixey!” Spoon out onto a medium hot griddle; cook until bubbles are well-formed around edges of pancakes; turn and cook other side. Enjoy with pure maple syrup

Buckwheat Pancakes with Fresh Berry Compote

Part 2 of 2 of the Berry Buckwheat Pancake Series. You already know how to make pancakes so I’m going to show you my favorite shot of the shoot – homemade berry topping poured over a big stack! 1 cup Organic Buckwheat Flour – I used @bobsredmill
¼ tsp Sea Salt
1 tsp Baking Powder
2 tbsp Local Farmers Market Honey
1 Egg beaten well
1 cup of whole milk
1 tbsp Vegetable Oil

Mix all of this together and stir mightily. Cook it up and enjoy with topping. It’s a very solid and incredibly healthy pancake. Buckwheat is a legit superfood. It can lower cholesterol, contains antioxidants, has tons of vitamins, protein and fiber and is gluten free.

Berry Compote - Buckwheat Pancake Part 1 of 2

Part 1 of 2 of the Berry Buckwheat Pancake Series. First time making this Blueberry and Raspberry compote and I'm a believer. Five all natural, organic ingredients: butter, brown sugar, lemon, blueberries & raspberries make for a sweet treat to any baked good. Also works as an ice cream topping. Make it yourself and let me know what you think.

-3 tbsp unsalted butter
-¼ cup brown sugar
-½ lemon - squeezed
-¾ cup blueberries
-¾ cup raspberries
Melt butter, stir in brown sugar, squeeze in lemon and stir in berries. Mix for 3 minutes. Pour on top of anything and enjoy!

Yam Cornbread

And here is the result of Sunday's Cornbread Challenge! Stella and Violet love cornbread but I discovered our household favorite Jiffy has 7 grams of sugar per muffin and that’s just wrong. I’m really trying to lower the girls’ sugar intake one meal at a time so I took matters into my own hands and whipped up some cornbread with a little local honey as a sweetener. I also snuck in some yam for a nutritious boost. Watch Violet’s reaction to the cornbread.

Makes: 8 medium muffins

Here’s what I used:

- 1 cup whole wheat pastry flour
- 1 cup organic cornmeal
- ½ tsp salt
- 1 tbsp baking powder (aluminum free)
- 1 tbsp local honey
- 1 egg
- 1 cup milk
- ¼ cup butter

How I made it:

Sift together the dry stuff, whisking in the cornmeal last. Then add the egg, milk and melted butter beating until it’s nice and creamy. Bake in a greased muffin tray at 425F for 18-21 minutes and serve warm.

This “Cocoa Berry” smoothie is a favorite around our house. It’s easy to make and packed full of protein, vitamins and fiber. Plus the cacao nibs give it a little chocolate twist and crunch that sets it apart.

Makes: two 8 oz smoothies

What you’ll need:

• 1 cup plain yogurt
• ½ cup raspberries
• ¼ cup blueberries
• 1 tbsp raw cacao nibs
• 1 banana
• ½ cup orange juice
• 1 tbsp honey

How to make:

This healthy smoothie is really simple to make. Gather your ingredients, toss them in a blender and blend until it’s nice and creamy. If it’s too thick add a little more OJ. Enjoy and let us know what you think.
