Ultimate Greek Chicken Souvlaki Bowl with Tzatziki ๐ฅ๐๐

For the Chicken Souvlaki:
600g chicken breast, cut into chunks ๐
2 tbsp olive oil ๐ซ
Juice of 1 lemon ๐
3 garlic cloves, minced ๐ง
1 tsp dried oregano ๐ฟ
Salt & pepper ๐ง
For the Tzatziki Sauce:
200g Greek yogurt ๐ฅฃ
1/2 cucumber, grated ๐ฅ
2 garlic cloves, minced ๐ง
1 tbsp olive oil ๐ซ
1 tbsp lemon juice ๐
1 tbsp fresh dill, chopped ๐ฟ
Salt & pepper ๐ง
For the Bowl:
200g basmati or long grain rice ๐
1 cucumber, sliced ๐ฅ
150g cherry tomatoes, halved ๐
80g Kalamata olives ๐ซ
1 small red onion, thinly sliced ๐ง
Fresh dill & lemon wedges for garnish ๐ฟ๐
Optional: pita bread or flatbread ๐ซ
๐ฉโ๐ณ Instructions:
Cook rice as directed. For the chicken, mix olive oil, lemon juice, garlic, oregano, salt, and pepper into a marinade. Coat chicken chunks, thread onto skewers, and grill or pan-sear for 12โ15 minutes until golden and cooked through. For the tzatziki, squeeze excess liquid from grated cucumber, then mix with yogurt, garlic, olive oil, lemon juice, dill, salt, and pepper. Assemble bowls with rice as the base, then top with chicken, cucumber, tomatoes, olives, red onion, and tzatziki. Garnish with fresh dill, lemon wedges, and warm pita if desired.

Swap chicken with lamb or halloumi for a variation.
Add roasted peppers or zucchini for extra veggies.
Use quinoa instead of rice for a lighter option.
