’Ive been making this homemade version of a Jersey Mike’s Italian sub lately and I just wanted to share because it’s a relatively cheap meal that can feed a family of 6. And it tastes so close to the real thing!
Sub rolls from Walmart: $2.48 for 6 rolls.
Italian seasoning: $1.00
Shredded cheddar: $2.00
I put a little butter on top of the bread rolls and sprinkle seasoning and cheese and bake for about 10-15 minutes at 350. Or until cheese is crispy. You can skip this and just toast plain bread if you want to save on cost a little bit!
Sliced pepperoni: $3.50
Sliced hard salami: $3.50
(I get the prepackaged stuff from Walmart)
Sliced cheese: $2.00
Iceberg lettuce: $1.28
1 onion finely sliced: .60
1 large tomato: $1.00
Red wine vinegar: $3.48
Canola oil: $3.00
Mayo: $4.00
(you can totally swap or remove ingredients to your liking to save on cost!)
Total: about $27 for 6 subs! You could even cut the sub rolls in half like I did in the photo to make more sandwiches, especially if you have little ones at home. We normally spend $13-$15 per sub when we eat out so this is a great alternative that we’ve been loving!
Edit since this is getting popular: I also add a little salt, pepper, and Italian seasoning to the sub after putting the oil, vinegar, and Mayo on!

Yummy dessert! Only 4 points each. Sugar free vanilla instant pudding (2small boxes), 4 cups fat free milk, 1 can sugar free cherry pie filling, 1 small cup of Oikos zero sugar vanilla yogurt. Mix all except the pie filling with a whisk for a minute or so, then pour into 6 one-cup ramekins. You could also pour into smaller ramekins and get more servings (equals less points). Enjoy!

What would you add to the Air Fryer Crispy Fried Onions? Maybe a dip or a side dish? 😊🧅

Ingredients:
Onions, Flour, Salt, Pepper, Oil

Directions:
1. Slice the onions thinly and soak them in water for 10 minutes.
2. Drain and dry the onions.
3. Toss the onions with flour, salt, and pepper.
4. Preheat the air fryer to 375°F (190°C).
5. Spray the air fryer basket with oil and spread the onion mixture evenly.
6. Air fry for 10-15 minutes, shaking halfway through, until crispy.
7. Remove and let cool before using.

Found this on Instagram so I thought I’d try it out tonight. It’s shredded chicken gravy on mashed potatoes.
2 cans cream of chicken
2 cans water
2 packets chicken gravy
2 packs chicken breast
Mashed potatoes(I use the ones that come in a bag and just add some butter)
-
1. Throw the cream of chicken, water, and chicken gravy packets into crockpot.
2. Season chicken breast with garlic powder, salt and pepper.
3. Place chicken in crockpot and let cook on low for 7-8 hours.
4. Take chicken out and pull apart with 2 forks then re add into crock pot then serve on mashed potatoes.
Rolls go great with it. There’s only 2 of us so I’ll have plenty of leftovers but there’s definitely enough to feed at least 5 people or feed you for multiple days.

Breakfast this morning was 432 calories and 25.1g protein. Let’s talk about the size of the meals I post. This isn’t a lot of food - not in terms of calories/energy anyway. This isn’t a plate full of cheesy pasta. It’s mostly protein and plenty of fruits and vegetables with some carbs too. When you fill your plate with nutrient dense food, you can have a higher volume of food for less calories.
I eat “big portions” (I don’t think they are big, but diet culture has made some people think they are big and that you have to eat tiny portions to lose weight) and I am still in a calorie deficit each day and I am losing weight this way.
Could I lose more weight and quicker by eating less? Maybe! But I have been there done that and I was not healthy at the end of it. I lost 100lbs fairly quickly 15 years ago and I was not healthy and I didn’t keep it off. On my wedding day I was very slim but I was SO weak. This time I am eating better and moving more to feel good. Weight loss goes alongside that but it’s not the focus. The focus is to be still lifting weights in my 60s, hiking in my 70s, travelling in my 80s and always being able to keep up with my kids (and any grandkids I might have). Looking “good” in a bikini in my 40s is not the goal.
I love food, I love volume eating and you CAN lose weight eating these size portions of nutrient dense food in a calorie deficit if you want to. What that number looks like is different for everyone though as there is no one size fits all.
Hope that clears up the “that’s too much food” comments. Too much for who?! 🤷🏻‍♀️🤷🏻‍♀️ Not me!
