Grilled Lobster Tail with Creamy Garlic Butter Sauce 🦞🧄🍽️

Ingredients:
4 lobster tails
1/2 cup unsalted butter
4 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon smoked paprika
1/4 cup heavy cream
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:

1. Start by preheating your grill to medium heat. It’s essential that your grill is ready to go to get those lovely grill marks on your lobster tails.

2. While the grill is warming up, prepare the lobster tails. Using kitchen scissors, carefully cut through the top shell of each lobster tail, starting from the base all the way to the tip, being cautious not to cut the meat beneath.

3. Gently pull the shell apart slightly and lift the lobster meat to sit on top of the shell. This presentation will enhance the grilling and make for a stunning dish.

4. In a small saucepan, melt the unsalted butter over low heat. Add minced garlic to the melted butter and sauté for about 1-2 minutes until fragrant, taking care not to let it burn.

5. Stir in the lemon juice and smoked paprika, mixing well to incorporate all flavors. Then, add in the heavy cream gradually, stirring continuously. Allow it to simmer for 3-4 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.

6. Once your sauce is ready, set it aside and head back to the grill. Place the lobster tails meat-side down on the grill for about 5-6 minutes. This allows the meat to absorb those lovely grilled flavors.

7. After 5-6 minutes, flip the lobster tails over so the meat is facing up. Brush generously with the creamy garlic butter sauce. Grill for an additional 4-5 minutes, basting once more with the sauce while cooking. The lobster is done when the meat is opaque and firm to the touch.

8. Once grilled to perfection, remove the lobster tails from the grill. Drizzle any remaining garlic butter sauce over the top and garnish with freshly chopped parsley for an appealing finish.

9. Serve immediately, and prepare yourself for an indulgent experience that will impress any seafood lover! Enjoy!

🥐 Paris-Brest Praline
👥 Serves: 6
⏲️ Time: Preparation 30 min • Cooking 40 min • Assembly 15 min

🥣 Ingredients
• Choux pastry:
– 125 ml water
– 125 ml milk
– 100 g butter
– 1 pinch salt
– 1 tbsp sugar (10 g)
– 140 g flour
– 4 medium eggs (≈ 200 g without shells)
• Praline mousseline cream:
– 250 ml whole milk
– 1 vanilla pod or 1 tsp vanilla extract
– 3 egg yolks
– 60 g sugar
– 30 g flour
– 20 g cornstarch
– 100 g softened butter
– 100 g praline (paste)
• Finishing:
– A few flaked almonds (20 g)
– Icing sugar

👩‍🍳 Very detailed preparation steps
1️⃣ Preheat the oven to 180°C (fan-assisted). 🔥
2️⃣ In a saucepan, bring the water, milk, butter, salt, and sugar to a boil. 💧
3️⃣ Remove from the heat, add the flour all at once and mix vigorously with a spatula until it forms a ball. 🌾
4️⃣ Return to low heat for 1 minute to dry out the dough. 🔥
5️⃣ Transfer the mixture to a blender or mixing bowl and beat in the eggs one by one until you get a smooth, glossy dough. 🥚
6️⃣ Pipe a 20cm circle of choux pastry (+ an inner circle for the ring) onto a baking sheet lined with baking paper. 🍥
7️⃣ Sprinkle with flaked almonds and bake for 30–35 minutes until golden brown. Let cool on a wire rack. 🌰
8️⃣ For the cream: Bring the milk and vanilla to a boil. 🍶
9️⃣ Whisk the egg yolks and sugar until pale, then add the flour and cornstarch. 🌟
🔟 Pour the hot milk over this mixture, whisking constantly, then pour back into the saucepan and cook for 1–2 minutes, stirring constantly. 🍮
1️⃣1️⃣ Off the heat, add 50g of butter, let cool, cover with cling film, and chill for 1 hour. ❄️
1️⃣2️⃣ Whip the remaining softened butter until soft, fold it into the cooled pastry cream, then fold in the praline. Mix until smooth. 🤎
1️⃣3️⃣ Cut the choux pastry ring in half horizontally. Generously fill the base with praline mousseline cream using a piping bag. 🍫
1️⃣4️⃣ Close the lid, sprinkle with icing sugar, and decorate with praline or almond shards. ❄️

💡 Tip to make this recipe easier
Prepare the cream the day before: it will be smoother and assembly will be faster on the big day.

🔄 Ingredient swap
Replace the praline with 100g of pistachio paste for a "Paris-Brest pistachio" version.

🔥 Baking tip
For a well-risen choux pastry, do not open the oven door during baking and let the ring cool inside, with the door ajar, for 10 minutes.
