Chicken Piccata with Lemon Sauce

Ingredients
Meat
• 8 Chicken breast, boneless skinless
Produce
• 3 Garlic cloves
• 1/4 cup Parsley, fresh
Refrigerated
• 1/2 cup Egg substitute
Canned Goods
• 6 tbsp White wine or chicken broth, dry
Condiments
• 1/8 tsp Hot pepper sauce
• 5 tbsp Lemon juice
Baking & Spices
• 1/2 cup All-purpose flour
• 1/2 tsp Salt
Oils & Vinegars
• 3 tsp Olive oil
Dairy
• 2 tbsp Butter
• 1/2 cup Parmesan cheese, grated

Instructions
Start by pounding the chicken breasts until they are about 1/4 inch thick. This ensures they cook evenly and tenderly.
In a shallow dish, combine the all-purpose flour, salt, and a pinch of black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts to the skillet. Cook for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and cook for about 30 seconds, until fragrant.
Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the skillet.
Stir in the lemon juice, hot pepper sauce, and fresh parsley. Let the sauce simmer for a few minutes to reduce and thicken slightly.
Reduce the heat to low and swirl in the butter until melted and fully incorporated into the sauce. This adds richness and flavor to the sauce.
Return the cooked chicken breasts to the skillet, spooning the lemon sauce over them. Let them simmer in the sauce for an additional minute to heat through.
Sprinkle grated Parmesan cheese over the chicken breasts, allowing it to melt slightly.
Serve the Chicken Piccata hot, garnished with additional fresh parsley and lemon slices if desired.

Chocolate Muffins🤤😍

Ingredients:
2 cups all-purpose flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup chocolate chips
Directions:
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, combine milk, oil, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.
Spoon the batter into the muffin tin, filling each cup about 3/4 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Creamy Garlic Parmesan Chicken Pasta

Ingredients:

1 pound rotini pasta, cooked and drained (save 1 cup of cooking water for casserole)
3 cups cooked chicken, diced or shredded
2 (15 ounce) jars Alfredo sauce
1 cup garlic parmesan sauce
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
Fresh parsley, chopped (for garnish, optional)

Instructions:

Preheat your oven to 375°F. Grease a 9×13 inch baking dish lightly with cooking spray or butter.
In a large mixing bowl, combine the cooked pasta, chicken, Alfredo sauce, garlic parmesan sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper to taste. Mix well. Add about ½ cup pasta water if needed for extra sauciness.
Transfer the mixture to the prepared baking dish, spreading evenly.
Sprinkle the remaining mozzarella and Parmesan cheese over the top.
Cover with aluminum foil and bake for 20-25 minutes, until the cheese is melted and bubbly.
Optional: For a golden top, broil for 2-3 minutes, watching carefully to avoid burning.
Let cool for 5 minutes before garnishing with chopped parsley, if desired. Serve warm and enjoy!

Skillet Zucchini and Mushrooms

Ingredients:
1 tablespoon olive oil
3 tablespoons butter, divided
2 small zucchini, cut into thin, half-moon slices
Salt and pepper, to taste
1 small yellow onion, finely diced
1 pound small button mushrooms, cleaned and patted dry
3 to 4 cloves garlic, minced
2 teaspoons fresh chopped herbs (use what you have on hand, or 1 teaspoon dried herbs like thyme and oregano)
1/4 cup vegetable broth
Chopped fresh parsley, for garnish
Grated Parmesan, for garnish

Directions:
1️⃣ Heat Oil and Butter: Add olive oil and 1/2 tablespoon butter to a large skillet and set over medium-high heat.

2️⃣ Cook Zucchini: Add zucchini slices to the hot oil; season with salt and pepper and cook for 3 to 4 minutes, or until fork-tender. Remove zucchini from the skillet and set aside. If there's any liquid in the skillet, wipe it out.

3️⃣ Cook Onions and Mushrooms: Return skillet to the burner and add the remaining butter; melt over medium-high heat. Stir in the onions and cook for 2 minutes, or until just softened. Add mushrooms and cook for 5 to 7 minutes, or until tender and nicely browned, stirring occasionally.

4️⃣ Add Garlic and Herbs: Stir in garlic and herbs; cook for 20 seconds.

5️⃣ Combine and Heat Through: Return zucchini to the skillet and mix with the mushrooms; cook for 1 minute, or until heated through.

6️⃣ Add Broth and Season: Pour in the vegetable broth and cook for 2 minutes. Taste for salt and pepper and adjust as needed. Remove skillet from heat.

7️⃣ Garnish and Serve: Sprinkle with chopped parsley and grated Parmesan. Serve and enjoy!

Lemon Cake 🤤

INGREDIENTS:
• 3 cups (360g/ 12.60z) all-purpose flour
• 1 (3.4 oz) package of instant lemon pudding
• ½ tsp salt
• ¼ tsp baking soda
• 1½ cup (340grams/ 120z) butter softened
• 2¾ cup (350grams/ 12.30z) granulated sugar
• 6 large eggs
• 2 tsp pure vanilla extract
• 1 (8 oz) sour cream
• 2 Tbsp fresh lemon zest

FOR THE GLAZE:
• 1½ cup (170grams/60z) powdered sugar
• 2 Tbsp fresh lemon juice, more if needed to thin
• 1 Tbsp butter, melted

METHOD:
1. Preheat the oven to 325°F. Butter and flour in a tube pan.
Set aside then sift together the all-purpose flour, lemon pudding mix, salt and baking soda.
2. Cream together the softened butter, granulated sugar and vanilla. Beat for 2-3 minutes until light and pale yellow in colour.
3. Add the eggs one at a time beating well after each addition.
Stop and scrape the sides of the bowl as needed.
4. Lower the speed of the mixer and add the sifted dry ingredients alternately with the sour cream. Mix until fully combined. Stir in the fresh lemon zest by hand.
5. Pour into the prepared tube pan and place into the oven.
6. Bake for 1 hour 20 minutes to 1 hour 30 minutes or until a toothpick inserted into the centre comes back clean.
7. Cool in the pan on a wired rack for 15 minutes then remove the outer ring from the pan and cool completely.
8. To prepare the glaze: Mix together the powdered sugar, lemon juice and melted butter. Drizzle over the cooled cake.
