My Mini Tres Leches Cakes!! I’m making these for Christmas 🤗 They are such an easy dessert to make for a crowd. The mini cake pans were perfect!

Cream together ½ cup unsalted butter with 1 cup white sugar for about five minutes until it’s light and fluffy. Add in 5 large eggs, 1 tsp vanilla and mix. Lastly add in 1 ½ cups all-purpose flour and 1 tsp baking powder. Once a cake batter forms stop mixing and scoop it into a 9x13 in baking dish or mini cake pans. Bake at 350 degrees for 30 minutes if you bake in a 9x13 in baking dish OR for 18-20 min if you bake in mini cake pans. Once a toothpick inserted into the center comes out clean the cake is done. Let it completely cool before poking it with a bunch of holes.
Whisk together 2 cups of whole milk, 12 oz evaporated milk and 12 oz sweetened condensed milk. Pour the tres leches mixture into a storage bottle so it’s easy to pour over the cake. Gently pour the tres leches over the cooled cake slowly in three rounds letting the cake absorb the milk fully before adding more. Store the cake in the refrigerator for an hour.
When you’re ready to serve, whip together 1 ½ cups heavy whipping cream, 1 cup white sugar and 1 tsp vanilla until smooth with stiff peaks. Frost the top of the cake with the whipped cream and sprinkle with cinnamon. Store in the refrigerator and serve cold!

Send this Honey Vanilla Coffee to someone you want to have a coffee date with! 🍯🫶🏽 Make this Honey Vanilla Syrup to flavor your coffee + tea! It’s so simple and delicious in any beverage. Over low heat mix together 1 cup water, 1 cup honey, 1 tsp vanilla extract and if you have it, 1 vanilla bean pod. Scrape the vanilla beans from the pod and toss them in along with the pod. Once the honey melts, pour it into a container with a spout and let it cool. Once cooled pour the honey syrup into a storage bottle and keep in the refrigerator for up to two weeks. Give it a slight shake before adding it to your coffees, teas and cold foam!

Gochujang Caramel Cookies are a sweet + spicy lovers dream 🤩 Gochujang is a sweet + spicy fermented chili paste that is typically used in Korean cuisine. It’s one of my favorite ingredients/flavors, I love using it in sauces and meat marinades but now I’m putting it in a cookie 🤗I saw this recipe in The NY Times and bookmarked it immediately! I finally baked them this afternoon, these babies did NOT disappoint. Sweet with a hint of spice, the gochujang caramel swirled through out each cookie is a unique and tasty surprise!

Make Gochujang Caramel Cookies!!
Mix together 1 tbs softened unsalted butter, 2 tbs brown sugar and 1 tbs gochujang until it comes together. Set aside.
In a large bowl whisk together 7 tbs softened unsalted butter, 1 cup sugar, 1 tsp vanilla and 1 egg until smooth. Whisk together for at least a minute.
Now add 1 1/2 cups flour, 1/2 tsp baking soda, 1/2 tsp salt and 1/4 tsp cinnamon and mix with a spatula until a cookie dough forms.
Add the gochujang mixture to the cookie dough and mix gently just until the gochujang mixture is swirled through out.
Scoop and let chill in the refrigerator for 15 minutes.
Bake at 350 degrees for 12-14 minutes or until the edges of the cookies are golden brown. Let cool completely and enjoy!

I had this overwhelming urge to clear out the depths of my baking cabinets. I really want to bake a few cookie boxes for friends and needed to take inventory of the ingredients I have, the ones I need to toss. While taking everything out I came across a tiny mason jar filled with Ryan’s favorite snack and his stickers from Trader Joe’s that he always kept safe or put them all over his body. The fruit snacks are so old now that some have leaked to the bottom of the jar.
I’ve kept this little jar safe like he’ll someday come back and ask for a “sticky” and my heart breaks into a million pieces all over again.
Today had productivity written all over it and with this little find I’m crushed. Wanting to do nothing now. It does not matter how long it’s been, it still feels like pure pain having to live life without my son.
Grief sucks because one minute you’re fine and then you’re crying in the kitchen over a tiny jar stuffed with a million memories.

Cinnamon Cream Chai >>> There is nothing I love more than an afternoon iced chai and it’s made 10x better with a cinnamon cream topping! For this I froth together 1 tablespoon milk, 2 tablespoons heavy whipping cream, 1/4 teaspoon vanilla and 1/2 teaspoon cinnamon 🤎

Hot Chocolate GRANOLA! Save this post immediately because you need to make a batch 🤎 It all comes together in one bowl and the mix of cocoa, maple + olive oil makes a perfect blend of flavors. You can use any marshmallows but these mini ones store nicely and I love their added crunch. This would also make a good homemade gift for a friend!

Hot Chocolate Granola - In a large bowl mix together; 2 cups oats, 1/2 cup chocolate chips, 1/4 cup cocoa powder, 1/4 cup olive oil, 1/4 cup maple syrup, 1 tsp vanilla and 1/4 tsp salt. Spread evenly on a baking sheet and bake at 325 degrees for 25 minutes. Let the granola fully cool before breaking it apart into chunks. Add 1 cup of mini marshmallows. Store in an air tight container for up to 2 weeks.

Strawberry Matcha 💗 This is always going to be in my afternoon drink rotation! Make your iced matcha as you like and do a strawberry cold foam! For that I froth together 1 tablespoon milk, 2 tablespoons heavy whipping cream, 1 teaspoon strawberry milk powder and a few crushed up freeze dried strawberries.

You are LOVING this easy Christmas Tree PB Brownie hack! Just bake a box of brownie mix in these tree molds. Let them cool and remove them. Next melt some peanut butter chips and add a spoonful to each tree in the mold. Make sure the melted peanut butter chips cover the bottom of the mold. Gently press the brownie back into the tree mold and let them set in the refrigerator until the peanut butter chips have hardened. Lemon Shortbread 🍋
Buttery, slightly sweet and tart shortbread is the perfect treat to bring us into the upcoming summer months! It’s also very easy to bake which is a total win 🙌🏽😋

Start by browning 1 cup of unsalted butter. Once it’s golden in color and fragrant let it completely cool on the counter before the next step.
Zest an entire lemon and massage the lemon zest into 1/3 cup of sugar. Next add the browned butter to the lemon sugar along with; the juice of 1 lemon, 1 tsp of vanilla, 3 cups of flour, 1/2 tsp of salt and 1/2 a cup of powdered sugar. Mix this until a crumbly dough forms.
In a 9 inch square baking dish or I used a 13 inch small baking sheet lined with parchment paper firmly press the shortbread dough in. Poke with a fork and bake at 350 degrees for 20 minutes or until golden in color. (If you used a 9 inch square baking dish you might need to bake for an additional 5-10 minutes because the shortbread will be thicker than mine here in the video.)
Let the shortbread fully cool before slicing into bars. Slather with lemon curd and enjoy!
