Cheesy Chicken Rotini Skillet - YAY or NAY ?

Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 ounces rotini pasta
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Pasta: Grab a large pot and fill it with salted water. Bring it to a rolling boil, then toss in the rotini. Cook according to the package instructions until it's al dente. Drain the pasta and set it aside for now.
2. SautΓ© the Chicken: In a roomy skillet over medium-high heat, warm up the olive oil. Season your chicken bites with Cajun seasoning, garlic powder, onion powder, salt, and black pepper. Add the chicken to the skillet and cook for about 6β7 minutes, or until golden and cooked through. Once done, remove the chicken from the skillet and set it aside.
3. Make the Cheesy Sauce: In that same skillet, melt the butter. Throw in the minced garlic and sautΓ© for about a minute until it's fragrant and you just canβt resist that smell! Add the chicken broth and heavy cream, bringing it to a gentle simmer. Stir in the mozzarella, cheddar, and Parmesan cheeses, mixing until the sauce becomes smooth and the cheese is wonderfully melted.
4. Combine Everything: Return the cooked chicken and rotini to the skillet. Give everything a good toss to ensure the pasta and chicken are luxuriously coated in that creamy, cheesy Cajun sauce. Let it simmer for another 2β3 minutes to let those flavors mingle together beautifully.
5. Serve: Spruce up your dish with freshly chopped parsley and, if youβre feeling extra cheesy, add some more cheese on top! Serve hot and enjoy every creamy, cheesy bite!
