Slap Ya Mama Pound Cake
Ingredients
For the Cake:
1 pound (4 sticks) unsalted butter, softened
2 ½ cups granulated sugar
1 teaspoon vanilla extract
1 teaspoon almond extract (optional but recommended)
8 large eggs
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup whole milk
For the White Glaze:
1 ½ cups powdered sugar
2–3 tablespoons milk or heavy cream
½ teaspoon vanilla extract
Instructions
1. Prepare the Cake
Preheat oven to 325°F (165°C).
Grease a 10-inch tube pan (or Bundt pan) and lightly dust with flour.
2. Make the Batter
In a large bowl, cream the butter and sugar until light and fluffy (about 5–7 minutes).
Add vanilla and almond extracts, mixing until combined.
Beat in eggs, one at a time, until fully incorporated.
In a separate bowl, whisk together flour, baking powder, and salt.
Alternately add dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until smooth—don’t overmix.
3. Bake
Pour batter into prepared pan and smooth the top.
Bake for 1 hour 20–30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 15–20 minutes.
4. Prepare the Glaze
In a small bowl, whisk together powdered sugar, milk or cream, and vanilla until smooth. Adjust consistency by adding more milk or sugar as needed—it should be pourable but not too thin.
5. Glaze the Cake
Carefully invert the cake onto a wire rack.
While the cake is still slightly warm, drizzle the white glaze over the top, letting it drip down the sides.
Allow glaze to set for 15–20 minutes before slicing.

Lemon Garlic Chicken with Creamy Bowtie Pasta

Ingredients:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz bowtie (farfalle) pasta
2 tablespoons olive oil
2 tablespoons butter
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
Zest of 1 lemon
Juice of 1 large lemon (about 3 tablespoons)
4 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
4 oz cream cheese, softened and cubed
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Optional: crushed red pepper flakes, to taste
Optional: chopped fresh parsley or basil, for garnish

Directions:

Bring a large pot of salted water to a boil and cook the bowtie pasta until al dente. Drain and set aside.
Meanwhile, heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Season chicken pieces with salt, pepper, garlic powder, onion powder, and Italian seasoning. Add the chicken to the skillet and cook for 6–8 minutes until golden and fully cooked. Transfer to a plate and set aside.
In the same skillet, add the remaining 1 tablespoon of butter. Sauté the garlic for about 1 minute until fragrant. Stir in lemon zest and juice, then pour in the chicken broth and bring to a simmer.
Reduce heat to medium-low and add the heavy cream and cream cheese. Stir until smooth and combined. Add mozzarella and Parmesan cheeses and stir until fully melted and the sauce becomes thick, creamy, and visibly luscious.
Return the cooked chicken to the skillet, then fold in the cooked bowtie pasta. Toss to coat everything evenly in the creamy lemon garlic sauce.
Let it simmer for another minute or two. Sprinkle with parsley and crushed red pepper flakes if desired. Serve hot and creamy with a side of garlic bread or salad.

Special Italian Cream Puffs with Custard Filling
Ingredients:
For the pastry:
• 1 sheet puff pastry, thawed
• Powdered sugar, for dusting
For the custard filling:
• 2 cups whole milk
• ½ cup granulated sugar
• ¼ cup cornstarch
• Pinch of salt
• 4 large egg yolks
• 2 teaspoons vanilla extract
• 2 tablespoons unsalted butter
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: Prepare the Puff Pastry
Using a round cutter, slice the thawed puff pastry into circles. Arrange them on the prepared baking sheet and gently prick each with a fork to prevent puffing too much.
Bake for 15–18 minutes, or until golden and crisp. Remove from oven and let them cool completely.
Step 3: Make the Custard Filling
In a medium saucepan, whisk together the milk, sugar, cornstarch, and a pinch of salt.
Heat gently over medium heat, stirring constantly, until the mixture starts to thicken.
In a separate bowl, whisk the egg yolks. Gradually pour a bit of the hot milk mixture into the yolks to temper them, whisking quickly to avoid scrambling.
Return the yolk mixture back to the saucepan. Continue stirring and cooking over low heat until smooth and thickened — about 5 minutes.
Remove from heat, then stir in vanilla extract and butter until fully combined.
Transfer to a bowl, cover with plastic wrap touching the surface, and chill in the fridge for 30 minutes.
Step 4: Assemble the Cream Puffs
Once the custard is chilled and the pastry circles are cool, carefully slice each puff in half horizontally.
Spoon or pipe the custard onto the bottom half of each pastry, then place the top half gently over it to form a filled sandwich.
Step 5: Serve with Elegance
Dust the tops lightly with powdered sugar for a beautiful finish.
Serve immediately or chill briefly for a cool, creamy bite.
These Italian cream puffs are perfect for special occasions or a sweet family dessert.
Enjoy!
