Halloween Terror-misu! πŸ‘» This no-bake pumpkin dessert is fa-BOO-lous!

Creamy Cello Mascarpone whipped to a tasty perfection with pumpkin purΓ©e, heavy cream and sugar & spice! Layered with ladyfingers, dusted with cocoa and creeping it real Halloween with a spooktacular graveyard theme πŸͺ¦

Check out the recipe below and get your fangs on some Cello Cheese mascarpone to make this fun dessert!

Halloween Terror-misu
Ingredients:
8oz Cello Mascarpone, room temp
1 cup pumpkin puree
1/4 cup sugar
1/4 cup brown sugar
2 tsp pumpkin pie spice
1 tsp vanilla
1 cup heavy cream
1 7oz package of ladyfingers
1 cup espresso, cooled

Topping-
1/2 cup heavy cream
1 tbsp powdered sugar
Cocoa powder
Tombstone cookies
Frosting ghosts

Instructions:
Mix together the mascarpone, pumpkin puree, sugars, pumpkin spice and vanilla until smooth
Add the heavy cream and whip until thick and creamy
Dip the ladyfingers in the cooled espresso and layer them in a 11”x7” dish
Spread half of the mascarpone pumpkin cream evenly over the ladyfingers
Repeat with a layer of dipped ladyfingers and the remaining mascarpone pumpkin cream
Cover and refrigerate at least 6 hours

Topping-
Whip together the heavy cream and powdered sugar until stiff peaks form
Spread the whipped cream over the top of the tiramisu
Dust with cocoa powder and decorate with tombstone cookies and frosting ghosts

Soft, chewy and OAT-rageously good!

Pumpkin Spice Oatmeal Cookies
17 cookies
Ingredients:
1/2 cup butter, room temp
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 cup pumpkin puree
1 tsp vanilla paste
1 1/2 cups flour
1 1/2 cups rolled oats
1 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
1/4 tsp salt

Instructions:
Preheat the oven to 350Β° F
Beat the butter and sugars until creamy
Mix in pumpkin puree and vanilla paste
Add the flour, oats, baking powder, baking soda, pumpkin pie spice and salt
Roll into balls about 2 tbsp in size and place on parchment lined baking sheets
Bake 15-18 minutes
Cool on pan

Creamy Pumpkin Pasta with Bacon & Sage
Ingredients:
16oz pasta, cooked per package instructions (reserve about a cup of pasta water)
5 slices bacon, fried crispy and crumbled
Fresh sage leaves, fried quickly just to crisp
2 tbsp butter
4 cloves garlic, minced
1 tbsp minced sage leaves
15oz pumpkin purΓ©e
1/2 cup heavy cream
1/4 tsp nutmeg
1/2 cup grated Parmesan cheese
Salt & pepper

Instructions:
Heat butter in 12” Signature Series Skillet over medium heat
Add garlic and sage and cook about 30 seconds, until fragrant
Stir in pumpkin purΓ©e, heavy cream and nutmeg until combined
Add reserved pasta water, as needed, for desired consistency
Stir in Parmesan cheese
Add the cooked pasta and toss to combine
Thin the sauce with addition pasta water, if needed, and season with salt and pepper
Top with crispy bacon and sage

Easy Dirty Rice with Ghost Pepper Smoked Sausage -
Ingredients:
3 cups chicken stock, divided
1 cup long grain rice
Cooking oil
Mountain View Meats Ghost Pepper Sausage, sliced
1 yellow onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
2 tsp Cajun seasoning
Parsley, chopped

Instructions:
Combine 2 cups chicken stock and rice in a saucepan
Bring to a boil then reduce heat, cover and simmer about 20 min until liquid is absorbed
Heat a large skillet over med-high heat and add about a tablespoon of cooking oil
Add sliced sausage and cook until browned
Add the onions, celery, bell pepper and garlic
Cook and stir until softened, about 5 min
Stir in the Cajun seasoning and remaining 1 cup of chicken stock
Simmer about 10 minutes until stock has reduced by about half
Fold in the cooked rice
Sprinkle with parsley
Enjoy!

Holy chip these are good!

Mocha Chip Cookies
13 cookies
Ingredients:
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter, melted
1/4 cup light brown sugar
3/4 cup granulated sugar
1/4 cup instant coffee granules
1 egg, room temp
2 tsp vanilla extract
1 cup chocolate chips

Instructions
Preheat oven to 350Β°F
Line baking sheet with parchment paper, set aside
Whisk together the flour, baking soda and salt and set aside
Stir together melted butter, sugars and instant coffee granules
Mix in the egg and vanilla extract
Add the flour mixture and stir just until combined
Fold in the chocolate chips
Scoop about 2 tablespoons of dough, per cookie, onto prepared baking sheet
Place about 2 inches apart
Press the tops to flatten slightly
Bake about 10 minutes, until the edges start to brown
Remove from oven and allow to cool on baking sheet about 3 minutes
Transfer to cooling rack and cool completely

Tender shrimp, tasty okra and smoked sausage make a delicious, cozy comforting meal!

Shrimp & Sausage Gumbo Recipe -
Ingredients:
2 tbsp oil
16 oz Smoked Sausage, sliced
1 cup butter
1 cup flour
1 onion, diced
1 green bell pepper, diced
3 stalks celery, diced
6 garlic cloves, minced
1 tbsp Cajun seasoning
14 oz diced tomatoes
8 cups chicken stock
2 bay leaves
12 oz frozen okra
1 lb shrimp, peeled and deveined
Rice, cooked
Green onions, chopped

Instructions:
Heat oil over med heat
Add sausage and cook until browned
Remove sausage from pot and set aside
Melt butter in pot and add the flour
Whisk or stir constantly for 20-30 minutes until roux is a deep golden brown
Mix in the onion, bell pepper, celery and garlic and cook about 5 minutes
Add sausage, Cajun seasoning, tomatoes, chicken stock and bay leaves
Heat to a simmer and cook, uncovered, 45 minutes
Stir in okra and shrimp and simmer about 10 minutes until okra is tender and shrimp are cooked through
Remove bay leaves
Serve with rice and sprinkle with green onions

Dutch Oven Pot Roast
Ingredients
3 1/2 pounds beef chuck roast, boneless
Salt and pepper
Oil
1 large onion, peeled and sliced
1/2 cup red wine
6 cloves garlic, minced
4 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves, dried
1 cup beef broth
1 lb carrots, cut into 2” pieces
1 1/2 lbs Yukon potatoes, halved

Instructions
Preheat oven to 300 degrees F.
Season the roast with salt and pepper
Heat 2 tbsp oil in 6-quart Victoria Series Dutch Oven over med-high heat
Sear roast on each side until golden brown, set aside
Reduce heat to medium and add onions to the Dutch oven
Cook until they start to brown, scraping the bottom of the pot
Add red wine and stir to deglaze the pot
Add garlic, thyme, rosemary, bay leaves and beef broth
Stir to combine and bring to a low boil
Return the roast to the pot, along with any juices
Cover, place in the oven and cook about 2 hours
Remove roast from oven, add the carrots and potatoes
Cover and cook another 2 hours until roast is fork tender and vegetables are cooked through

Gravy -
Remove the roast and vegetables from the Dutch oven
Skim some of the fat from the cooking liquid
Heat to a simmer and add about 1 tbsp of cornstarch slurry per cup of liquid
Stir to thicken and serve with roast and vegetables

Cozy up to this comforting bowl of spicy sausage and potato soup!

Spicy Sausage & Potato Soup Recipe -
Ingredients:
2 Tbsp olive oil
16 oz Andouille Sausage, sliced
1 cup diced onion
1 cup chopped celery
1 cup chopped red bell pepper
2 cloves of garlic, minced
1 Tbsp Cajun seasoning
Salt and pepper, to taste
4 russet potatoes, peeled and cubed
4 1/2 cups chicken stock
1/2 cup heavy cream, room temperature
Parsley for garnish

Instructions:
Heat oil over med-high heat
Add sausage and cook until browned
Remove sausage from pot and set aside
Add onion, celery and bell pepper to pot and cook 3-4 minutes, until vegetables soften
Add garlic and Cajun seasoning
Stir and cook another minute
Stir in potatoes and chicken stock and simmer about 15 minutes until potatoes are tender
Stir in the heavy cream and andouille sausage
Simmer 10 minutes
Ladle into bowls and sprinkle with parsley
