15-Minute Tortilla Egg Breakfast Bake

Ingredients
• 2–3 tortillas (flour or whole wheat)
• 3-6 eggs
• 1/2 cup cottage cheese
• 1/2 cup fresh spinach
• 1/2 cup cherry tomatoes, chopped
• 1/4 cup grated cheese
• Salt, to taste
• Black pepper, to taste

Instructions
1. Preheat oven to 375°F (190°C).
2. Prepare the base
Place the tortillas into a small baking dish, pressing them down so they form a bowl-like crust along the sides.
3. Make the egg mixture
In a bowl, whisk together:
• eggs
• cottage cheese
• salt
• black pepper
4. Add the filling
Scatter the spinach and chopped tomatoes evenly over the tortillas.
5. Pour the eggs
Pour the egg and cottage cheese mixture on top.
6. Add cheese
Sprinkle grated cheese over everything.
7. Bake
Bake for 12–15 minutes, until the eggs are set and the tortilla edges are slightly golden and crispy.
8. Serve
Let it cool for 2–3 minutes, slice, and enjoy.

Apple Strudel Pie

Ingredients

Apples
• 6 large apples
• 1–2 tbsp lemon juice

Batter
• 5 eggs
• 2 cups all-purpose flour
• ¾ tsp baking powder
• ⅓ cup sour cream
• 1 tsp vanilla extract
• 1 cup + 2 tbsp granulated sugar
• A pinch of salt

For the pan + finishing
• Butter for greasing
• Powdered sugar for dusting

Instructions
1. Grease a baking dish generously with butter.
2. Thinly slice the apples. Toss with lemon juice so they don’t brown.
3. In a large bowl, beat the eggs, granulated sugar, vanilla extract, and salt until the mixture is fluffy and pale.
4. Add the sour cream and mix until smooth.
5. In another bowl, whisk together the flour and baking powder.
6. Gradually add the dry ingredients to the wet ingredients, mixing until you achieve a silky, pourable batter (now thicker because we increased the dough).
7. Spread the sliced apples evenly into the baking dish.
8. Pour the batter over the apples, covering them fully.
9. Bake at 180°C / 350°F for 45–55 minutes, until golden brown and set in the center.
10. Let cool slightly, then dust with regular powdered sugar before serving.

Roasted Bone Marrow

Ingredients
• 6–8 beef marrow bones (cut crosswise, canoe or rounds)
• Sea salt (flaky is best)
• Fresh cracked black pepper
• Fresh thyme or parsley (optional)

For serving:
• Toasted baguette or sourdough
• Lemon wedges
• Simple parsley salad (parsley, shallot, capers, lemon, olive oil)

Instructions
1. Soak (optional but ideal)
Place bones in salted cold water for 2–12 hours in the fridge (change water once or twice).
This removes blood and gives a cleaner flavor.
2. Preheat oven
Heat oven to 450°F (230°C).
3. Season
Pat bones dry. Place upright on a baking sheet or small roasting pan.
Drizzle lightly with olive oil and season generously with salt and pepper.
Add a few thyme leaves or a tiny bit of garlic if you like.
4. Roast
Roast for 12–18 minutes.
The marrow should be:
• Soft
• Bubbling slightly
• Pulling away from the bone edges
Do not overcook or it will melt out completely.
5. Finish
Sprinkle with more flaky salt and fresh herbs right after removing from oven.
6. Serve immediately
With toasted bread, lemon, and salad.

• 4–5 sheets of rice paper
• Neutral oil for frying

For the filling:
• 6 oz sushi-grade salmon, finely diced
• 1 small avocado, cubed
• ½ cucumber, finely diced
• 1 tablespoon chives, finely sliced
• 1 teaspoon toasted sesame seeds
• Optional: a few teaspoons of finely diced mango or pickled ginger for brightness

For the dressing:
• 1 tablespoon soy sauce
• 1 teaspoon lime juice
• ½ teaspoon honey or agave
• ½ teaspoon sesame oil
• ½ teaspoon grated fresh ginger

Cut each rice paper sheet into quarters. Heat oil in a small pan over medium-high heat. One at a time, dip each rice paper quarter into the hot oil for 3–5 seconds—it will puff and crisp instantly. Halloween-Inspired Arrangement

I wanted to create something elegant yet moody for Halloween, a flower arrangement that feels dark, dramatic, and a little mysterious. Instead of going for the typical orange and black, I chose deep reds, dark burgundies, and muted purples to capture Halloween energy.

Flowers I used:
• Eryngium bunches (those ghostly, silvery-blue spiked blooms)
• Garden roses (deep, velvety crimson — pure drama)
• Jumbo mum balls (dark ruby and plum tones for volume)
• Eucalyptus branches (soft green-gray to balance and frame)

Here’s how I built it step-by-step:
1. Prepare your vase.
Start by greeting your vase, I always do this before arranging! Create a grid on top using clear tape to give structure and help your stems stay in place.
2. Begin with the garden roses.
Insert your garden roses first. They form the base of the design and set that rich, moody tone. Their velvety petals are perfect for creating a dark romantic foundation.
3. Add the jumbo mum balls.
Weave in the mum balls next, their texture adds fullness and dimension. I love how their rounded shape complements the layered roses while deepening the color palette.
4. Incorporate the eryngium.
Add your eryngium stems to introduce contrast. Their cool blue-gray hue gives the arrangement that ghostly edge, balancing out all the warmth and making the colors pop.
5. Finish with eucalyptus branches.
Frame the entire arrangement with eucalyptus. Let the branches drape a bit for a natural, almost overgrown effect.

My Granola recipe
Ingredients

Dry Ingredients
• 2 cups rolled oats
• ¾ cup chopped pecans
• ¾ cup chopped almonds
• ½ cup sunflower seeds
• ½ teaspoon sea salt

Wet Ingredients
• ⅓ cup honey
• 2 tablespoons olive oil
• 1 teaspoon vanilla extract (optional but recommended)

After Baking
• ½ cup dark chocolate chips
• ¾ cup dried strawberries (chopped if large)

1. Preheat oven to 325°F (160°C).
2. In a large bowl, combine oats, pecans, almonds, sunflower seeds, and salt.
3. In a small bowl, mix honey, olive oil, and vanilla.
4. Pour wet ingredients over dry and mix thoroughly until everything is coated.
5. Spread mixture onto a parchment-lined baking sheet in an even layer.
6. Press down firmly with a spatula to create clusters.
7. Bake for 20–25 minutes until lightly golden.
8. Remove from oven and let cool completely (this step creates crunch).
