🍎 Moist Apple Muffins
📝 Ingredients (Makes 12 Muffins)
Dry Ingredients
2 cups all-purpose flour
¾ cup granulated sugar
¼ cup brown sugar (for moisture & flavor)
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1½ tsp ground cinnamon
¼ tsp nutmeg (optional)
Wet Ingredients
2 large eggs (room temperature)
½ cup vegetable oil or melted butter
½ cup milk (or buttermilk)
1½ tsp vanilla extract
Apples
2 cups diced apples (about 2 medium; Honeycrisp or Granny Smith work best)
1 tsp lemon juice (to prevent browning)
Optional Topping (Highly Recommended)
2 tbsp brown sugar
½ tsp cinnamon
2 tbsp chopped walnuts or pecans
👩🍳 Instructions
1️⃣ Preheat & Prep
Preheat oven to 375°F (190°C).
Line a muffin tin with paper liners or lightly grease.
2️⃣ Mix Dry Ingredients
In a large bowl, whisk together:
flour, both sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
3️⃣ Mix Wet Ingredients
In another bowl, beat eggs, oil (or butter), milk, and vanilla until smooth.
4️⃣ Combine
Pour wet ingredients into dry and gently fold until just combined.
Do not overmix—small lumps are okay.
5️⃣ Add Apples
Toss diced apples with lemon juice, then fold into the batter.
6️⃣ Fill & Top
Divide batter evenly into muffin cups (about ¾ full).
Sprinkle with cinnamon sugar and nuts if using.
7️⃣ Bake
Bake for 18–22 minutes, or until a toothpick comes out clean.
8️⃣ Cool
Let muffins rest 5 minutes in the pan, then transfer to a wire rack.
Serve warm for maximum apple aroma 🍏✨
