Chicken Bacon Ranch Sausage with Big Wick's Ranch Mix. This is a 3 day process but well worth the effort! Here’s the recipe if you’d like to give it a try:

12.5 pound batch
Can be doubled for 25, 50, or 100lbs

8 pounds of chicken thigh meat
4 pounds of bacon end pieces
50 grams of Big Wick’s Smoked Jalapeño Ranch Mix
2 & ¼ teaspoons of pink curing salt - 8 grams
6 ounces of water - 170 grams

Credit to Dayne’s Craft Barbecue for teaching me how to make this a couple years ago.

Hey everyone, this is really Wes. My personal account has been shut down for about a month, and we are still working on getting it back or setting up a new one. My friend Kelsey and I just had lunch at Chicken Run at 19th & Quaker. We both had the chicken gumbo & half sandwich, and Larissa brought us a blueberry muffin waffle for dessert!
