Violations Noted:
• Several foods, including sauces, vegetables, fried shrimp, garlic in oil, spices, and curry sauce, were stored uncovered. All items were covered during the inspection. (4 points)
• In-use knives were stored in a visibly soiled crevice, and pink and black buildup was observed inside the ice machine. The affected equipment and utensils were cleaned and sanitized during the inspection. (4 points)
• A dish was washed with soap and water but placed on the dish rack without being sanitized. It was sanitized in the dishwasher during the inspection. (4 points)
• Cooked shrimp, dumplings, and chicken were cooling inside tightly tied plastic bags, which restricted proper cooling. The food was moved to freezers for rapid cooling and the bags were opened to improve airflow. (3 points)
• The kitchen handwashing sink was missing the required handwashing sign. A sign was provided and posted during the inspection. (1 point)
• Food debris was observed on floors throughout the kitchen, primarily underneath equipment and tables. (1 point)
• An employee cellphone was stored on an in-use service counter, and employee beverages were stored with service food containers. The items were moved to a designated employee area. (1 point, repeat)
