**Fluffy Buttermilk Pancakes**
Ingredients:
* 1 cup all-purpose flour
* 2 tbsp sugar
* 2 tsp baking powder
* 1/4 tsp salt
* 1 cup buttermilk
* 1 large egg
* 2 tbsp melted butter
Instructions:
1. Whisk dry ingredients in bowl.
2. In separate bowl, whisk buttermilk, egg, melted butter.
3. Add wet ingredients to dry ingredients, stir until combined. Batter should still be slightly lumpy.
4. Heat non-stick skillet or griddle over medium heat.
5. Drop 1/4 cupfuls of batter onto skillet or griddle.
6. Cook 2-3 minutes or until bubbles appear on surface and edges start to dry. Flip and cook another 1-2 minutes.
