                                            Light, fresh, and beautifully balanced — this simple salmon toast is the perfect early afternoon bite for two.
Ingredients
 • 4 slices smoked salmon
 • 2 slices artisan bread, toasted
 • 1 ripe avocado
 • 1 tsp lemon juice
 • 1 tbsp red onion, thinly sliced
 • A sprinkle of sesame seeds
 • Fresh basil or microgreens for garnish
Directions
 1. In a small bowl, mash the avocado with lemon juice, salt, and a dash of pepper.
 2. Toast your bread slices until golden and crisp.
 3. Spread the avocado mixture evenly on each slice.
 4. Layer smoked salmon over the top, then add thinly sliced red onions.
 5. Sprinkle sesame seeds and garnish with basil or microgreens.
Serve immediately with a glass of chilled sparkling water or white wine for an elegant, feel-good snack.
