That was a surprise! A few years ago I took a culinary interest in the lowly “Sheepshead” or Freshwater Drum to be more specific. It’s saltwater cousin the red drum is so tasty that it was nearly over fished into extinction. First I caught small ones between 10 and 16 inches, filleted them, and fried them up with breading. You know, like we do with yellow perch. The flavor was not as bad as I was led to believe. Getting past the negative comments of people who have never eaten them can be taxing to keep an open mind. The flesh was surprisingly firm. If you have ever had swordfish, the cooked flesh of drum is quite like that. Very firm and white. It wasn’t the flavor of yellow perch or walleye that we all know and love, but it wasn’t bad at all. Bluegills have a unique flavor and I would rank drum at that level down from perch. Two days ago I caught one on a red and white 3” Daredevil that was about 30” long and weighed about 15 pounds. I filleted it as before and noted that drum have no pin bones, just a simple bone structure like a perch or bluegill. My skills for filleting fish are rusty and for big fish like this one non-existent. I did the best I could, but when removing the skin my blade skived high first pass so a second pass gave me a thin 3rd piece of flesh. I had read that smoking them, especially large ones was best, and I love smoked fish so that is what I did. I seasoned the fillets with Old Bay seasoning and smoked them low and slow at 200 F for 2.5 hours. Like salmon, I overcooked it for a rich smoked flavor. The result was quite pleasing. I would not rank it up there with salmon or whitefish, but close. It was very good! It is more oily than I expected, about like a salmon. Oil in the drum flesh allows one to overcook it for smoke flavor without drying it out to a smoky hard nugget. The Eat Safe Fish booklet published by the Michigan DNR ranks the drum with any other warm water fish that we prey on (one meal a month for fish from Muskegon Lake) from a specific body of water. Most of us fish clean waters for tasty fish and the drum is no different. I fish the channel between Lake Michigan and Muskegon Lake. From now on drum are my target fish. Good fight, no regulations to comply with, tasty flesh, and simple panfish bone structure for an easy filet. Next big one I catch I’m going to make it like salmon candy. For smaller drum I’ll be cooking them on the grill with real charcoal and I think they will be a close match to Mahi-Mahi. Can’t wait to try it! I’ll never catch and release a drum again.
I just read the most recent article by Scott Mackenthun on producing large Bluegill He wrote that as if it was something new for anglers to consider. The actual work he refers to regarding harvesting large adult bluegill males and the use of the term cuckold (smaller males fertilizing the eggs), sneakers etc. The entire article could have been written in the 1980's based upon work the IL Natural History Survey and IL DNR biologists conducted on numerous lakes in the state during that decade into the 90's. In addition he states that Illinois currently does not have any length or bag limits for bluegill. Check our reg booklet and he would have found that that was info is far from correct. We have dozens of waters with bluegill/redear sunfish bag and or size limits. I appreciate your magazine but your contributors need to do a better job of researching prior to writing. I got my March magazine on Friday April 17th, the moon times listed were already out of date. I look at them to get an idea what may be happening with the bite. Months listed were Feb. March,up toApril 11 was already out dated by time I got my magazine. Could anything be done about getting the moon times out sooner in the mags. THANK YOU.

Now with generic game and fish regional not one story of game or fish in Tennessee. Just more generic articles like every other outdoor sports magazine. So sad. I've been buying TN sportsman mag for over 30 years. 😕
