I'm sharing my recipe for an idea I've had for over a month now. I made it today and it's so satisfying, creamy, and yummy.
Easy Fish Stick Chowder
Ingredients:
10-15 fish sticks (frozen)
1 can diced potatoes (drained)
1 can diced carrots (drained)
2 cups milk
2 cups water or broth
1 small onion, chopped
1-10 chopped cloves garlic (go with your heart!)
1–2 tbsp butter or oil
Salt, pepper
1 tbsp Old Bay seasoning
1 tbsp dried dill w**d
Instructions:
1. Bake the fish sticks according to package. Set aside to cool slightly, yaje the breading off of each fish stick, and then cut into chunks.
2. Start the chowder base-
In a pot, melt butter/heat oil over medium heat. Add chopped onion and garlic and cook until soft (about 3–4 minutes). Stir in canned potatoes & carrots, a pinch of salt and pepper, and other seasonings.
3. Add liquids-
Pour in the milk and broth. Simmer gently for 8–10 minutes, stirring occasionally. Use a spoon to gently mash some of the potatoes for a thicker texture.
4. Gently stir in the cooked fish stick pieces. Let them sit in the chowder for 3–5 minutes to absorb flavor.
5. Serve!
Optional: top with a bit of shredded cheese, oyster crackers, or extra pepper.
