Oakdell Egg Farms, one of the member farms, has experienced two separate incidents of bird flu that required the culling of nearly half of the flock.

The goal of ProEgg is to have a wide pool of producers to access supply that could fill any gaps in orders, in the case of an avian flu outbreak or any other situation, one member of the co-op could take over fulfilling orders from another member.

USU Extension economic study says there's a potential market for more local beef processing and sales in Utah:

"Overall, there is potential growth for Utah beef processing and
sales. Utah consumers desire local beef products, and a significant portion are willing to pay a premium for it. A very small-scale meat processing facility can be feasible but would require that beef is sold and positioned as a premium product. Smaller processing plants in regional areas can increase the resiliency of the meat supply in Utah and provide the potential for ranchers to develop additional revenue streams."
