🌿🐟🥔🌿🧀 Garlic Herb Salmon with Asparagus and Potatoes, drizzled with a Rich Basil Pesto Cream over Alfredo—a vibrant and flavorful dish that combines flaky salmon, tender vegetables, and hearty potatoes with a double dose of creamy, herbaceous goodness! Flaky salmon infused with garlic and herbs, served alongside roasted or steamed asparagus and potatoes, all elevated by a luscious basil pesto cream drizzled over a light Alfredo sauce. A truly satisfying and elegant meal! ✨

🧾 Ingredients (Serves 2-3)

🐟 Garlic Herb Salmon:
2 (6-8 oz) salmon fillets
2 tbsp olive oil
2 cloves garlic, minced 🧄
1 tbsp fresh dill, chopped 🌿
1 tbsp fresh parsley, chopped 🌿
½ tsp dried thyme
Salt & freshly cracked black pepper to taste
🌿🥔 Asparagus and Potatoes:
1 bunch asparagus, trimmed
2 medium Yukon Gold potatoes, cut into bite-sized pieces
2 tbsp olive oil
2 cloves garlic, minced (optional, for roasting)
Salt & freshly cracked black pepper to taste
🌿🧀 Rich Basil Pesto Cream Drizzle:
¼ cup fresh basil leaves
2 tbsp grated Parmesan cheese 🧀
1 clove garlic, minced
2 tbsp olive oil
2 tbsp heavy cream
Salt & freshly cracked black pepper to taste
🧀 Light Alfredo Sauce (Optional Base):
1 tbsp butter 🧈
1 clove garlic, minced
½ cup heavy cream
¼ cup grated Parmesan cheese
Salt & freshly cracked black pepper to taste
🔥 Instructions

Prepare the Asparagus and Potatoes: Preheat oven to 200°C (400°F) if roasting. Toss potato pieces with 1 tbsp olive oil, minced garlic (if using), salt, and pepper. Spread on a baking sheet and roast for 15 minutes. Add asparagus to the baking sheet (tossed with the remaining 1 tbsp olive oil, salt, and pepper) and roast for another 10-15 minutes, or until potatoes are tender and asparagus is tender-crisp. Alternatively, you can steam or boil the asparagus and potatoes until tender.

Egg & Veggie Bowl with Salsa

This dish looks like a fried or poached egg over a base of shredded vegetables (like cabbage or Brussels sprouts), fresh herbs, tomatoes, and salsa.

Ingredients:

1–2 eggs

1 cup shredded Brussels sprouts or cabbage (lightly sautéed)

1 small tomato, diced

1–2 tbsp salsa or hot sauce

Fresh herbs (like cilantro, green onions)

Olive oil

Salt and pepper

Instructions:

1. Sauté the veggies: In a pan, heat olive oil and sauté the shredded Brussels sprouts/cabbage for about 5–7 minutes until softened.

2. Fry the egg: In another pan, fry the egg sunny-side up or to your liking.

3. Assemble the bowl: Place the cooked veggies in a bowl, add the diced tomato and herbs, then top with the fried egg.

4. Add salsa: Spoon over salsa or hot sauce and season with salt and pepper.

Ultimate Surf & Turf Feast

Ingredients:

For the Steak:

1 ribeye or sirloin steak (8-10 oz)

Salt and freshly ground black pepper

1 tbsp olive oil

For the Shrimp:

12 large shrimp, peeled and deveined

2 tbsp butter

2 garlic cloves, minced

Salt and pepper to taste

For the Lobster Tail:

1 large lobster tail

2 tbsp melted butter

Paprika for garnish

For the Grilled Chicken Breast:

1 chicken breast

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp chili powder

Salt and pepper

1 tbsp olive oil

For the Steamed Broccoli:

1 cup broccoli florets

Salt to taste

For the Baked Potato with Cheddar & Shrimp:

1 large baking potato

1/2 cup shredded cheddar cheese

6 cooked shrimp, chopped

1 tbsp butter

For the Mixed Greens Salad:

2 cups mixed greens

1 tbsp olive oil

1 tsp balsamic vinegar

Salt and pepper

For the Butter Sauce:

4 tbsp butter

1 tbsp lemon juice

Salt and pepper

Instructions:

Prepare the Steak:

Preheat grill or grill pan to high heat.

Season steak generously with salt and pepper and rub with olive oil.

Grill steak 4-5 minutes per side for medium rare, or until desired doneness. Let rest before slicing.

Cook the Shrimp:

In a skillet, melt butter over medium heat.

Add garlic and shrimp, season with salt and pepper.

Cook shrimp until pink and opaque, about 2-3 minutes per side. Set aside.

Prepare Lobster Tail:

Preheat oven to 425°F (220°C).

Cut lobster shell lengthwise, loosen meat but keep attached.

Brush lobster meat with melted butter, sprinkle with paprika.

Bake for 12-15 minutes until meat is opaque and shell is golden.

Grill the Chicken:

Mix smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.

Rub chicken breast with olive oil and spice mix.

Grill on medium heat 6-7 minutes per side until cooked through.

Steam the Broccoli:

Steam broccoli florets until tender-crisp, about 5 minutes.

Season with salt.

Bake Potato & Assemble:

Bake potato at 400°F (200°C) for 45-60 minutes until soft.

Lamb Chops with Mashed Potatoes and Asparagus 👨‍🍳

Ingredients:

For the Lamb Chops: 🥩
- 4 lamb chops
- 2 tablespoons olive oil 🫒
- 4 cloves garlic, minced 🧄
- 1 tablespoon fresh rosemary, chopped 🌿 (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped 🌱 (or 1 teaspoon dried)
- Salt and pepper to taste 🧂

For the Mashed Potatoes: 🥔
- 4 large potatoes, peeled and cut into chunks
- 4 tablespoons butter 🧈
- 1/2 cup milk or cream 🥛
- Salt and pepper to taste 🧂

For the Asparagus: 🥬
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil 🫒
- Salt and pepper to taste 🧂
- Juice of half a lemon 🍋 (optional)

Instructions:

1. Prepare the Lamb Chops:
- Season the lamb chops with salt, pepper, garlic, rosemary, and thyme.
- Heat olive oil in a skillet over medium-high heat. Add the lamb chops and sear for about 3-4 minutes on each side for medium-rare, or cook to your desired doneness. Remove and let rest.

2. Make the Mashed Potatoes:
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter and milk, then mash until smooth and creamy. Season with salt and pepper.

3. Cook the Asparagus:
- Toss the asparagus with olive oil, salt, and pepper. Heat a skillet over medium heat and cook the asparagus for about 4-5 minutes until tender-crisp. Squeeze lemon juice over the asparagus before serving.

4. Serve:
- Plate the lamb chops with a generous scoop of mashed potatoes and a side of asparagus.

Grilled Skewers (Vegetable, Beef, and Shrimp Skewers)
Ingredients:

Beef skewers: Cubed sirloin or ribeye steak, olive oil, garlic, salt, pepper

Shrimp skewers: Jumbo shrimp, lemon juice, garlic, parsley, olive oil

Veggie skewers: Zucchini, bell peppers (red, yellow, green), cherry tomatoes, red onion, olive oil, salt, pepper

Instructions:

Marinate:

Beef: Mix olive oil, minced garlic, salt, and pepper. Toss beef cubes. Marinate 30 mins.

Shrimp: Combine lemon juice, garlic, parsley, and olive oil. Toss shrimp. Marinate 15–20 mins.

Veggies: Drizzle with olive oil, season with salt and pepper.

Assemble skewers accordingly.

Grill on medium-high heat:

Veggies: 8–10 mins

Beef: 3–4 mins per side (medium rare)

Shrimp: 2–3 mins per side

Serve with a dipping sauce or rice if desired.
