One of my favourite foods are Wild Mushrooms.
Incredibly, I find myself in a place that has so many varieties to choose from (or not, as the case may be… 😂). There are dozens of different mushrooms here, and I have been able to enjoy almost a dozen already. I am guessing at least double that, are edible, but I don’t dare try them, despite their delectable aromas, because I simply don’t know enough about them yet (and the looks of despair my on my son's face cannot be ignored…)
These gorgeous mushrooms, the Saffron Milk Caps (or Pinys, as we call them) are probably the last of the season for us. They taste amazing, but you have to pick them young, throw them on a hot sizzle (along with your onion, depending on the dish), and then reduce the heat and let them slow cook for a while, bringing out all those lovely flavours. The sky’s the limit with cooking options, but I love my creamy tomato and mushroom pasta, and whenever they pop up, that’s what I’ll be having for lunch. 😊
