• Founded by Caydence Cruse, Cole Cruse, & longtime pal Jimmy Tidmore🛠️

This afternoon, in their 3rd weekend open, I got to spend some time learning about the heart behind Mosaic.🖼️

The team met back at Northwestern in Orange City, Iowa. They would often walk the mile down Central Ave from school to their favorite shop, Townsquare Coffee House. Things all started with a love for media & for coffee-Caydence w/photography, Cole w/videography, & Jimmy w/managing coffeeshops.🏫

3040 Hennepin was actually formerly a clothing store called Scout. The 3 teamed up with Moonstone Design, CB Architecture, & Mercury Mosaics-going over 5-6 layout options to transform it & to create a beautiful space they thought was best suited for their community. 🫱🏻‍🫲🏼

It was truly humble beginnings as Mosaic started with roasting coffee beans in a plastic popcorn machine Cole found at a thrift store called Bibles (now known as Legacy Thrift). Years later with combined skills & help from a few pals, they’ve breathed their dream to life.🍿

🤔FINAL THOUGHTS💭
It was really fun hearing about the building process. From spending 2 days on the Mosaic wall, having to adjust the build 9 inches to be ADA compliant for the bathroom, to lifting the heavy pew in from a local church there’s a story behind many of the pieces here. Imagine Florence by Malcolm Todd playing, friend’s catching up on how Uptown is coming back, & even a little pupper being brought in a sling. A really uplifting shop with great coffee, go & support them!👍🏼

This afternoon, I shared 20 minutes w/Angie.

Angie has always loved octopuses. The name comes from the idea that people always have their hands (tentacles) in many things.💡

She moved from Brooklyn to MN 3 years ago w/her husband and kids. With years of branding experience as well as exposure to countries like Japan and Korea, Angie noticed trends taking years to travel coast to coast — and saw an opportunity here in the Twin Cities.🛫

Research is important to her. With a marketing background, Angie knows that hype is meaningless without ex*****on. She wants M***a Moono to feel accessible and relatable — whether you’re stationary, Studio Ghibli, blind boxes, Kawaii culture, or just hunting for your next coffee shop.🫱🏼‍🫲🏽

It’s only been 8 days since opening, & some shelves have already been wiped clean by customers traveling from a short walk away to 30+ minutes out. Safe to say: the research paid off.🧐

🤔FINAL THOUGHTS💭
Light jazz was playing when I walked in — instantly soothing. I spotted a stack of Pockys across the room and got hit right in the childhood. Pastries from Marc Heu & Bogart’s set the tone for the quality of the menu, & the drinks are hefty (think boba tea size). A chic-welcoming feel to the space, staff that banter & genuinely care, & a very tasty matcha tonic.👍🏼

Today I spoke with two baristas, T & M. The support the community has given to Sip Society has been nothing short of great. Things have started to pick up & Summer will be a great time for those on the Greenway to make a pitstop. M shared there is a chef they work with & that they’re always trying to improve their menu. Sacad gives pretty free reign to his team on creating different menu items & is very open to feedback & ideas. 💭

Sacad came to the U.S. from Somalia in 1999. He was a refugee, driven to create a name, a legacy, & spaces where people feel inspired. He’s now a 6-time business owner with an MBA, he’s a CSM, & a VC-really making the best of the opportunities he said his family gave him.🧠

One of Sacad’s quotes that resonated with me was from a reel of his: “I didn’t know what I was getting into, but if you’ve got the confidence and the right people in your corner, things can become reality.”🙌🏼

FINAL THOUGHTS:
I’m a big fan of those who just go for it & figure things out along the way-big fan of Sip Society diving into the coffee scene. The space had lots of natural light coming through & reflecting off the white marble tables & tiles along the coffee bar-makes you want to stay a while. The staff brought your order to the table, & the selection from the menu was beyond what you’d see at your average cafe. Nice shop w/a warm welcoming atmosphere, very friendly team, & a great selection.👍🏼

Today I spoke with Greyson, who’s been a barista since 2017!

1. CMHOC was founded by Josh Larson & David Wenzel, their grand opening Jan 28, 2023. 
2. This is a designated sober space—all events are drug & alcohol-free.
3. They host a Vintage Vendor Market on the last Saturday of every month!
4. Local artists are featured in-store at no charge—supporting & uplifting their work. 


Fun Fact: David grew up in a family with a vintage shop & brought his dream to life here in the Twin Cities all the way from Cincinnati.💭

FINAL THOUGHTS:
This place is so unique. Seriously makes my day to be able to find spaces like Clapping Monkey. I thought it was just a small shop in part of a strip mall-they are literally half of the strip mall hahaha. The staff are super chill here having suggestions & back up recommendations for first timers. Very welcoming space with a retro vintage diner feel. If you’re into coffee, antiques, or local artists, Clapping Monkey is a must-visit. GO SUPPORT THEM!👍🏼

I really like this place. While I usually enjoy music, the natural conversation and quiet atmosphere make perfect sense for a bookstore, enhancing the ambiance. The corner location sees tons of foot traffic, drawing in curious passersby. I noticed lots of dogs, families, and friends catching up over a book club with coffee in hand. The staff was incredibly kind and open to sharing drink recommendations. Coffee and books are always a winning combo—go support them!👍🏼

THE SCOOP:
Walking under the string lights made it feel like Spring was just around the corner today, the 49 degree weather was a bonus. Dinging from the Green Line leaving Union Depot to head towards Target Field was my queue to get this visit started. Walking in I heard Tonguetied by Grouplove, chattering from pals catching up over brunch all along the walls that were lined with local art/plants, & friends/family narrowing down their opponents mystery character in Guess Who?🚊

Peak hours seating was a challenge—this was just proof that Lost Fox Lowertown is the place to be. This visit I spoke with Eliana, Charlotte, & Angie, who shared about Lost Fox.🦊

Lost Fox was founded by Annie & Michael Rose. Annie has over 26 years of restaurant industry experience & Michael has been in the coffee industry for over 13 years now. They previously worked at Dark Horse & Caffetto.🛠️

• Dog friendly AND open until 11pm (1am on Fri/Sat)

The team here feels more like a family. You can see it through how they treat each other & through the opportunities they’re given. Angie’s sister who is the head chef & Jordan M one of the lead bartenders have had the chance to curate an inventive menu, one of the staff members shared that Annie does a great job at balancing the schedule & not overworking staff “Yeah. She’s a great leader”, & beyond the work they celebrate together like taking the team out to Pizza Ranch for their daughter Mala’s birthday back in July. Cozy space, great team culture, & an excellent late night spot.👍🏼

This visit I spoke with/met Elaine, Amber, Carrie, & Leo.🫱🏻‍🫲🏼

A quick preface, Constellation is all about educating the community about special needs. As a mental health advocate I’m a big fan.🧠 

They provide jobs for individuals with disabilities in a space designed for them—rubber floors, chairs with a sled base, acoustic ceilings, soft lighting, & no music. EVERY detail was looked at extra carefully.😌

Memory can be a hurdle at times. Instead of calling out names, they call playing cards (I had the 5 & 7 of hearts!). This was inspired by Bitty & Beau’s Coffee in North Carolina.The team personalizes roles for each worker—whether it’s taking orders, managing the register, or folding sleeves—everyone is set up for success. They even have a training program to assess sensory & motor skills.🃏

Fun Fact: The unemployment rate for individuals with special needs is 3x higher than those with physical disabilities. Constellation is leading the way by making a change.📊

FINAL THOUGHTS:
So they don’t take tips here. This is me doing my part to spread the word lol. The vibe here is *stellar*, like there’s literally a moon sculpture, a Milky Way mural, & if you missed it the first time, their address is on GALAXIE avenue hahaha. I found out that the owners & Carrie spent about 3 years doing research on coffee to make Constellation a reality. Carrie shared she didn’t know a single thing about coffee before going into this-a few dedicated years later & here we are-really motivating stuff. Great cause, go support them.👍🏼
