Wood ears mushrooms, chanterelles, carrot onion, bell pepper, celery and diced Grouse breast sautéed in butter is the base of today's dish.

Add rice, stock, salt, pepper and a healthy pinch of saffron and soon you have a healthy dish straight out of the Rocky Mountains.

This is one of my favorite fall recipes, serve with hot spiced c***r for extra autumnal magic.
