Christmas menu is out and open until this Sunday at 5pm!!🎄✨ also, I have a little update with what the next month holds as far as bread goes at the end. Without further ado, here’s whats available:

🎄Sourdough Cinnamon Rolls with Browned Butter Frosting
🎄Chocolate Pie
🎄Maple Pumpkin pie
🎄Classic Sourdough Bread (a few batard shaped available as well, can someone say cranberry Brie stuffed loaf?? 😋)
🎄Lindor Chocolate Sourdough Bread
🎄Sourdough Cranberry Walnut White Chocolate Cookies
🎄Sourdough Chocolate Chip Cookies

Pickup will be 12/19 in Pleasanton at the park from 4-5pm OR in Kearney at Glenwood Corners from 5:30-6pm. Everything on the menu freezes well and I will provide instructions so that you can enjoy it fresh for Christmas or New Years even! So here is the link to order 😊

https://www.hotplate.com/buckeyeacresbakery

This will be the last pickup for December, and the next one won’t be until January 9 (we will be on vacation through New Year’s🎉) And that will actually be the only one in January and for a little while as I’m having ACL surgery the next week and that will put a damper on baking. So just make sure to stock up and freeze some when the time comes, and until then, we hope you have a wonderful Christmas and holiday season ♥️🎁

This week’s specialty flavors are Double Chocolate & Jalapeno Cheddar Sourdough Bread! Menu closes Monday at 5pm so don’t forget to check it out!

Last, but definitely not least, we are switching to using an ORGANIC all purpose flour! We’ve been working on finding one that we can get reliably and that we like, and I think we’ve found it so we’re excited about that!

This little baking journey of mine has always been about more than just selling baked goods. Food brings people together and whenever someone stops me and says how much they enjoyed their order, it brings a smile to my face knowing it brought them a little joy. Special food around the holidays make some of the sweetest memories, and I’m looking forward to helping bring some of that joy to your Thanksgiving holiday this year 🧡

Read to the end for FREE COOKIES 🍪

This week’s bread drop off will be in Ravenna! We’re still navigating how often we want to drop off bread in town vs home pickups, so thanks for bearing with us while we figure out a more predictable schedule with that 😊 In other news, we’ve been experimenting with different ways to bake more loaves at a time (current way is 2 loaves at a time 🙃) and might have found it. While I love the look of the traditional batard shape, I’d be lying if I didn’t say how nice the sandwich loaf shape is 🙌 I will still experiment more with it, but if I do choose to go that route, don’t fret because everything about the bread will stay the same besides the shape!

🍪 Now to the cookies part - if you are a previous customer and have enjoyed your order, we’d love it if you left us a positive review here on Facebook! If you review us in the next week, I’m offering a free 6 pack of cookies with your next bread order!! ✨ (go to our profile, leave a review in the review section, and after I will message you with the code to use on your next order)

As always, I greatly appreciate the support I’ve gotten on this baking journey and to be able to do it at home with my girls, so thank you ♥️ (and don’t miss out on your chance at free cookies 😉)

SEPTEMBER 🍂🌾

We took a little zoo trip, harvested our turkeys, dusted off my leather working area, made lots of food, and cleaned up the garden. This summer felt very “at capacity” and I can feel things slowing down and am thankful for the season of “rest” that’s coming. I used to basically mourn summer ending, but that has definitely changed in the last few years. However, I’ve been reminding myself to soak up all the warm weather we have left before it comes to an end. Hope you do the same!

How are you feeling with the seasons changing?? Do you have a favorite?

✨ BREAD CARE ✨

The base ingredients of our sourdough loaves are just flour, water, and salt, meaning zero preservatives! Therefore, it will not last near as long as a store bought loaf. So here are just a few things to keep in mind when you get your fresh bread:
🥖 it will typically last 5-7 days on the counter
🥖 inclusion loaves with cheese will mold faster
🥖 if you don’t think you’ll get through your loaf fast enough, put half of it in a freezer bag and stick it in the freezer to keep it fresh!
🥖 if your loaf starts to get drier/stale, you can spritz it with water and put it in the oven for 5-10 minutes until warm!

A snippet of this coming week’s new flavor (Red, White & Blue 🇺🇸✨) and the last bread pickup day! We’re sure enjoying ourselves over here between the trialing, baking, taste testing (especially this), and chatting with our customers. This new loaf is perfect for celebrating Labor Day so make sure to get yours before the menu closes on Monday 😊

COFFEE ICE CREAM ✨
2 1/3c whole milk
2 1/2c heavy cream
1 1/4c sugar, divided
1/4t salt
1 1/2t vanilla
7 egg yolks
2 1/2-3 TB instant coffee

1. Add the milk, cream, half of the sugar, and the salt to a pot and heat over medium-low heat until the mixture comes just barely to a boil.
2. While that’s heating, combine the yolks and remaining sugar together and whisk until it’s paler and thick.
3. Once the cream mix has come to a slight boil, slowly add about 1/3 of it to the yolk/sugar mix while whisking. Whisk another 1/3 of the mixture in and then return the combined mixture to the pot.
4. Whisk in the instant coffee until dissolved. I find adding 3TB yields a very yummy, rich coffee flavor but I would start with less and taste test to see if you want to add more here. Stir the mixture constantly over low heat until it thickens slightly and coats the back of a spoon (this should only take a few minutes). Do NOT boil this or the yolks will overcook. Take off of heat and add vanilla. If you happen to boil it and find little chunks of eggs in your mix, run through a fine mesh strainer until you get them out.
5. Cover and let mixture cool in refrigerator for at least 2 hours (I find it best if it’s 40° or below to churn) and churn according to ice cream maker. Fits a 2qt machine.

This week’s menu is up and it includes a new bread flavor AND sourdough chocolate chip cookies! The Parmesan Herb bread has fresh herbs that grow in our garden that give a delicious summer flavor and of course, is filled with chunked and grated Parmesan cheese. The cookies have browned butter, sea salt on top, and are fermented for 24+ hours and are my family’s favorite chocolate chip cookie. 🍪 can’t forget about the classic either! Hope to see you Thursday for bread pick-up 🫶

Our third year of raising meat birds is in the books! We’ve learned so much over the last few years and our second batch was our best as far as loss goes and quickest butchering day, with the first batch being the second best. While butchering chickens in itself isn’t the funnest thing we ever do, gathering with our families and enjoying conversations while we work and coming together over good food always makes for a memorable day. Plus, homemade ice cream is always a motivator to work quickly 😃

This next week’s bread drop is going to be a little different! I plan on going back to the Holt County Fair to watch my sister show, and since some suggested they’d like some when I go back home, that’s what we’re gonna do! I will bring the bread next Thursday to the fairgrounds and the pickup time would be from 11am-1pm. (The exact location for pickup at the fair, I’m still working on, but will let you know) If this time doesn’t work for you but you’d really like bread, just message me and we might be able to work something out. Bread flavors will be Classic, Jalapeño Cheddar, and Cinnamon Raisin! You can order now and it will close Sunday evening at 7pm. 😊🥖 Excited to go back to the fair and bring some bread with!

Chicken Harvesting Day ✨ last weekend we harvested our first batch of birds and all went well! This is the first year that we’ll have two butcher days because in another month our second batch will be ready. Hard to believe this is already our fourth year raising our own chicken. We’ve learned so much since the beginning and continue to learn something new every year to raise better birds. We were able to borrow my uncle’s homemade scalder that keeps the temp constant (vs a propane burner that fluctuates) and learned a lower scalding temp like 145° and a longer time works much better than a high scalding time and shorter time like we did in the past. We had zero pin feathers to pick and it was *glorious*. Here’s to learning and growing all the time ✨

Do you raise your own chicken?? Or maybe it’s on your goal list?? I wanna know!

Warm homemade pudding - one of life’s most well hidden secrets. I do remember my mom making some cook & serve chocolate pudding which was definitely a treat, and yet we almost always eat pudding cold! It’s good cold, it really is, BUT man, homemade pudding right off the stove is like hot bread straight out of the oven with a slab of butter. It’s such a treat, and I feel as though it may become a special memory for our kids, and I’m all about making food that later in life will bring back feelings of their childhood 💛

Have you had warm pudding??
