Sweet & Smoky Pineapple BBQ Chicken Thighs đđ
Tender, juicy chicken thighs glazed in a homemade sweet and tangy pineapple barbecue sauce.
Ingredients:
- 8 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 cup pineapple juice
- 1 cup ketchup
- 1/3 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon chili flakes (optional)
- Fresh pineapple chunks for serving (optional)
Directions:
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry and season on both sides with salt, pepper, and smoked paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 5-6 minutes until golden brown. Flip and sear for 2 more minutes. Remove chicken and set aside.
- In the same skillet, combine pineapple juice, ketchup, brown sugar, vinegar, soy sauce, garlic, onion powder, and chili flakes. Bring to a simmer, stirring, and cook for 5-7 minutes until slightly thickened.
- Return the chicken thighs to the skillet, skin-side up, spooning the sauce over them.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- For a caramelized finish, broil for 2-3 minutes, watching carefully.
- Let rest for 5 minutes before serving. Garnish with fresh pineapple chunks if desired.
