No-Bake Chocolate Protein Fudge Bars

Soft, creamy chocolate filling wrapped in a silky coating — but secretly packed with protein and zero sugar crash.

đź§ľ Ingredients:
For the fudge base:
1 scoop chocolate protein powder (whey or casein, ~30g)
2 tbsp cocoa powder
ÂĽ cup almond flour or coconut flour
3 tbsp nut butter (peanut or almond)
2 tbsp Greek yogurt or cottage cheese
2–3 tbsp milk of choice (unsweetened almond or Fairlife)
1 tbsp sweetener (monk fruit, stevia, or erythritol)
Pinch of salt
For the coating:
½ cup sugar-free chocolate chips (Lily’s or ChocZero)
1 tsp coconut oil (for melting)
🥣 Instructions:
1. Make the Base
In a bowl, mix protein powder, cocoa powder, flour, salt, and sweetener.
Add nut butter, yogurt, and milk. Mix until a thick dough forms — like protein cookie dough.
Adjust texture: add 1 tsp milk at a time if too dry.
2. Shape the Bars
Press the dough into a parchment-lined loaf pan or shape into small rectangles by hand.
Place in the freezer for 30–40 minutes to firm up.
3. Melt the Chocolate
In a microwave or double boiler, melt chocolate chips with coconut oil until smooth.
4. Dip & Set
Dip each bar in melted chocolate, using a fork to coat fully.
Place on parchment and refrigerate until chocolate sets (~15 minutes).
Optional: drizzle extra melted chocolate over the top for that store-bought look.
