2 cups Beef broth

1 cup Red w**e (or extra broth)

1 lb Baby potatoes

4 Carrots (cut into chunks)

1 Onion (chopped)

3 cloves Garlic (smashed)

Fresh thyme, rosemary, salt, & pepper

Instructions:
Season beef generously with salt and pepper, then sear all sides in a hot dutch oven until browned. Remove meat; add onion and garlic, stirring for 2 minutes. Pour in broth and w**e, scraping up browned bits. Return beef to the pot, add herbs, cover, and braise at 325°F (160°C) for 2.5 hours.
