2nd Place Brisket this weekend. Trying to get better at presentation. Be honest on appearance.
FAQ Answers
1. Local competition of 20 teams.
2. Not Sanctioned.. however, plan to enter my first sanctioned contest in June.
3. In Hindsight, I should’ve flipped the box over and used the flat lid side to display meat.

Hey Gang . First smoke on my block smoker. Did a 12 # pork shoulder. I still need to seal seams. Gotta work on getting correct flow for steady temp. Was a bit hot at the start...overall 6 hours, then 1 hour in paper. Internal of 205. Having fun with the process!. Loving all the info, feedback and results on here.

This may be the best brisket I have ever made. 10 out of 10 on every aspect.
