Burrata Caprese Pizza Follow for more Recipes

Whether it’s for a Birthday or Holiday, this Neapolitan-style Caprese pizza is a solid choice. Topped with fresh basil pesto, creamy burrata, and slow-roasted cherry tomato confit, then finished with a drizzle of hot honey for that perfect balance of flavors.

I used a homemade Neapolitan-style dough in a pizza oven, but any pizza or focaccia will work.

Batter ingredients:
by
- 75ml oat milk (1/3 cup)
- 1/2 tbsp apple cider vinegar
- 50g flour (0.4 cup)
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- pinch of salt
- 1/2 tbsp vegetable oil

Method:
1. Pour the vinegar into the milk and let it sit for 5 mins. This creates the buttermilk.
2. In a bowl combine all the dry ingredients then mix in all the wet ingredients + buttermilk. Mix until well combined.
3. Coat all the banana pieces with the batter and fry on a pan in a little oil on both sides.

Ripe summer peaches are wonderfully sweet on their own. If you haven’t tried grilling them, you are missing out on a truly delectable treat. Grilling only enhances the peach’s natural sweetness and makes them even more juicy 🤤🧡

INGREDIENTS:
Peach
Mint
Brie
Granola
Pistachio
Blueberry & Raspberry

Roast the peaches:
Put the peach and fry over low heat for 1.5 minutes on each side. The peach should not be fully cooked, otherwise it will lose its integrity, and the pulp will turn into porridge, which is not good. The main thing is that it becomes a little softer.

Then put the cheese on top of the peaches and return it to the oven to grill the peaches with cheese for 8 minutes. The goal is to grill the cheese a little to give it a creamy texture.

Mexican-inspired CHUCK ROAST 🌮 by
If you’ve loved my previous chuck roast recipes, this one is even easier and tastier. It’s easy to prep in just 10 minutes, then cooks low and slow in the oven all in one pot. Its a perfect meal prep recipe since its so versatile, and its SO good.
You only need 1 oven safe dish.
Here is how to make it:
0.Before we start, feel free to double or triple this recipe depending on your family and belly situation.
1.Preheat oven to 325F.
2.Start with 3lbs beef chuck roast and add it to an oven safe dish. You’ll want one with a lid, or cover it for the first portion. Add 1 thinly sliced yellow onion at the base.
3.Season both sides of beef with 3-4 generous pinches salt, pepper, 1 packet of taco seasoning. Rub well on all sides.
4.Pour in 17oz of beef broth, 2 chipotle adobo peppers (from the can), and 4-5 minced garlic cloves.
5.Cover, then place in the oven at 325F for 4 hours. If yours is more than 3lb aim for about an hour per pound + 1 hour. So if its 2 lbs go for 3 hours, or in this case 3 lbs, go for 4.
6. After 4hrs, remove the chuck roast from the oven, shred using two forks, mix well with the drippings, then put back in the oven at 400F for 30-40 mins. Shred again when you remove from the oven.
7.Devour as is with the sauce, some avocado, fresh cilantro, or whatever toppings you want. I served these inside lowcarb tortillas with mashed guac, fresh chopped cilantro, cheese, and topped with hot sauce.

This easy baked brie with honey, nuts, and dried fruit is an elegant yet effortless appetizer recipe that is perfect for holiday parties.

🎥

INGREDIENTS
• ounce wheel of Brie
• cup Dried Apricots
• cup Dried Cranberries
• cup Pistachios, lightly crushed
• tablespoons Honey

Preheat oven. Hea the oven to 350°F.
Prepare the brie. Place brie on a baking sheet lined with a piece of parchment paper (just in case it leaks).
Use a knife to score the top of the brie in a crosshatch pattern (this helps the honey seep into the cheese).
Drizzle with honey. Pour 2-3 tablespoons of honey evenly over the top of the brie. Reserve some honey for serving later.
Bake. When the oven reaches 250°C
place brie in the oven and bake for 15
Toppings. Combine dried fruit, pistachios and 1 tablespoon of honey in a small bowl. Stir together.
Serve. Remove from oven, top with the fruit, nuts, and honey, and drizzle a little extra honey on top before serving. Enjoy ❤️

For the Chicken + Marinade:▪️1+1/2 lb. Boneless Skinless Chicken Thighs (or sub breasts pounded 1/2” thick)▪️2 Cloves Garlic, minced▪️1/2 a Lemon, juice▪️1 Tbsp Olive Oil▪️1 tsp Oregano▪️1 tsp Paprika▪️1 tsp Kosher Salt▪️1/4 tsp Pepper▪️

For the Tzatziki: ▪️1/2 a Large Cucumber, grated▪️2 Cups Plain 2% Greek Yogurt▪️1 Clove Garlic, grated or minced▪️1 Lemon, juice▪️1 Tbsp Olive Oil▪️1/2 tsp Kosher Salt▪️

For the Lemon Dill Rice:▪️2 Cups Chicken Stock▪️1/2 tsp Kosher Salt▪️1 Clove Garlic, minced▪️1 Cup Long-Grain Rice▪️1 Medium Lemon, zest (~1 Tbsp)▪️2 Tbsp Fresh Dill, chopped▪️2 Tbsp Butter▪️

For the Salad + Dressing:▪️2 Cups Romaine Lettuce, sliced in thin strips▪️1/2 a Large Cucumber (1+1/2 Cups)▪️1+1/2 Cups Cherry Tomatoes, sliced in quarters▪️1/4 of a Small Red Onion, sliced in thin strips▪️2 Tbsp Red Wine Vinegar▪️2 Tbsp Olive Oil▪️1/4 tsp Dried Oregano▪️1/4 tsp Pepper▪️1/4 tsp Kosher Salt▪️

For Serving:▪️Grilled Pita▪️

1️⃣ Place the chicken in a bowl with the rest of the ingredients for the marinade; cover and refrigerate while you prep the rest of the ingredients (at least 15 mins)
2️⃣ Mix together the ingredients for the tzatziki and set aside in the fridge
3️⃣ To make the lemon dill rice, add the chicken stock, salt, and garlic to a small pot and bring to a boil; stir in the rice and then turn the heat down to low and cover and simmer for 20 mins (or until all liquid is absorbed); turn off the heat and stir in the lemon zest, dill, and butter
4️⃣ To make the salad, place the romaine, cucumber, cherry tomatoes, and red onion in a bowl; whisk together the red wine vinegar, olive oil, oregano, salt, and pepper in a separate bowl and set aside until the chicken is done
5️⃣ Preheat a pan over medium high and add 2 tsp oil; sear the chicken 5-6 mins per side (10-12 mins total) until internal temp reaches 165F then remove from the pan, let rest for a couple mins, and slice
6️⃣ Toss the salad with the dressing and serve it in a bowl with the lemon dill rice, chicken, tzatziki, and pita - enjoy!

Healthy veggie ceviche tostadas✨ by

For the Tostadas: ▪️2 Tbsp Avocado Oil▪️6 Corn Tortillas▪️Kosher Salt▪️

For the Ceviche:▪️1/2 Cup Jicama, peeled & diced small▪️1/2 Cup Red Bell Pepper, diced small▪️1 Avocado, diced small▪️1/4 Cup Red Onion, diced small▪️1/2 of a Jalapeño or Serrano Pepper, diced small (remove seeds for less spicy)▪️1 Ear Fresh Sweet Corn, kernels sliced off (or sub 1/2 cup thawed frozen corn)▪️1/4 Cup Cilantro, finely chopped▪️

For the Dressing:▪️3 Limes, juice▪️3 Tbsp Olive Oil▪️1/4 tsp Kosher Salt▪️1/4 tsp Pepper▪️1 Clove Garlic, grated or finely chopped▪️

For Serving:▪️1 Lime, cut into wedges▪️

1️⃣ Preheat the oven to 400F convection (or 425F regular bake).
2️⃣ Coat a baking sheet with 2 Tbsp avocado oil. Place the tortillas on the baking sheet and rub both sides in the oil. Sprinkle with salt and bake for 6 minutes on the first side, flip, and bake for 3-5 more minutes on the second side until they are crispy and deep golden brown around the edges. (They’ll continue to crisp up as they cool.)
3️⃣ In a large bowl, add the jicama, red bell pepper, avocado, red onion, jalapeño, corn, and cilantro.
4️⃣ Make the dressing: In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and garlic until it emulsifies and thickens.
5️⃣ Pour the dressing on the veggies and mix to coat everything evenly. Taste and season with more salt if desired. Spoon the ceviche on the tostadas, serve with lime wedges, and enjoy!
