🍍 Piña Colada Cheesecake
🛒 Ingredients

Crust

2 cups crushed graham crackers
1/2 cup melted butter

Filling

450 g cream cheese (softened)
3/4 cup sugar
2 eggs
1 tsp vanilla
1 cup crushed pineapple (well drained)
1/2 cup coconut cream or thick coconut milk
1/2 cup shredded coconut

Topping

1 cup whipped cream
1/2 cup pineapple topping or jam
Toasted coconut flakes
Maraschino cherries
👩‍🍳 Instructions
Make crust
Mix graham crackers with melted butter.
Press into a springform pan. Chill 15 minutes.
Prepare filling
Beat cream cheese and sugar until smooth.
Add eggs and vanilla, mix gently.
Fold in pineapple, coconut cream, and shredded coconut.
Bake
Pour filling over crust.
Bake at 160°C / 320°F for 50–60 minutes (center slightly jiggly).
Cool & chill
Let cool completely, then refrigerate 4 hours or overnight.

Tropical Sunset Punch:

Ingredients
1 orange, sliced
1 can pineapple rings, drained
2 cups orange juice
2 cups pineapple juice
1 to 1 1/2 cups white rum or coconut rum
1 to 2 cups lemon-lime soda or sparkling lemonade
1/2 cup grenadine
ice
Instructions
Add the orange slices and pineapple rings to a large drink dispenser or punch bowl.
Pour in the rum.
Add the orange juice and pineapple juice.
Stir gently.
Add ice.
Slowly pour in the grenadine last so it sinks and creates the sunset effect.
Top with lemon-lime soda just before serving.
Easy tip

Do not stir too much after adding grenadine, or you’ll lose the layered sunset look.

Non-alcoholic version

Replace the rum with:

1 cup coconut water
or
1 extra cup pineapple juice + 1 cup lemon-lime soda
Simple serving ratio

For each glass:

1 part rum
2 parts orange juice
2 parts pineapple juice
splash of grenadine
