Salmão com Curry de Coco

Ingredientes

4 filés de salmão (aproximadamente 150-200 g
cada)
1 lata (400 ml) de leite de coco
2 colheres de sopa de pasta de curry (pode ser vermelha,
verde ou amarelo, dependendo da sua preferência)
1 cebola picada
2 dentes de alho picados
1 pedaço de gengibre fresco (cerca de 1 cm),
ralado
1 pimentão vermelho cortado em tiras
1 cenoura cortada em fatias finas
1 colher de chá de açafrão em pó (opcional)
1 colher de chá de cominho em pó (opcional)
2 colheres de sopa de óleo vegetal
Sal a gosto
Pimenta a gosto
Folhas de coentro fresco para decorar
Fatias de pimentão vermelho para decorar (opcional)
Método

Prepare os ingredientes Tempere os filés
