One-Pot Tomato Basil Pasta. Recipe ↓ ■ INGREDIENTS: • pasta (fettuccine, fusilli, or rigatoni) - 9 oz (250 g) • cherry tomatoes - 7 oz (200 g), halved • garlic - 3 cloves, minced • red onion - ½ medium, finely chopped • tomato sauce or marinara - 4 tbsp • chicken stock - 1½ cups (360 ml) • heavy cream - 1 cup (240 ml) • grated parmesan - ½ cup • fresh basil - handful, chopped • dried oregano - ½ tsp • salt - to taste • black pepper - to taste ■ HOW TO COOK: 1. Place pasta, cherry tomatoes, garlic, onion, tomato sauce, oregano, salt, and black pepper into a large pot. 2. Pour in the chicken stock and heavy cream. Stir gently so the pasta is mostly submerged. 3. Bring to a boil over medium-high heat, then reduce to medium and cook for 10-12 minutes, stirring occasionally so the pasta doesn’t stick. 4. As the pasta cooks, the liquid will reduce and thicken into a creamy sauce. 5. Stir in the grated parmesan and cook another 1-2 minutes until the sauce becomes silky and coats the pasta. 6. Add fresh basil and mix gently. 7. Top with extra parmesan, cracked black pepper, and a few basil leaves. ■ INFO (approx.): Prep: 5 min Cook: 15 min Serves: 2-3 ~540 kcal | 20 g protein | 26 g fat | 56 g carbs (per serving)
