Recipe One Pan Chicken Burrito Bowl 🌶️🥑
Here’s how to make it:
Ingredients:
1 lb (450g) boneless, skinless chicken breasts or thighs, diced
1 cup long-grain white or brown rice
1 can (15 oz) black beans, rinsed and drained
1 cup corn, canned or frozen
1 medium onion, diced
1 bell pepper (red or green), diced
2 tbsp olive oil
1 tsp ground cumin
1 tsp chili powder
1 tsp garlic powder
Salt and pepper, to taste
Juice of 1 lime
Fresh cilantro, chopped for garnish
Optional toppings: Avocado, cheese, sour cream, jalapeños
Instructions:
Preparation: Heat olive oil in a large skillet over medium-high heat. Season the diced chicken with cumin, chili powder, garlic powder, salt, and pepper.
Cooking: Add the seasoned chicken to the skillet and sauté until cooked through and golden brown. Stir in the diced onion and bell pepper, cooking until tender. Mix in the rice, black beans, and corn. Pour in water or chicken broth, bring to a boil, then reduce heat, cover, and simmer until the rice is tender and the liquid is absorbed.
Final touches: Fluff the rice with a fork, squeeze lime juice over the top, and garnish with cilantro.
Serving: Serve hot, topped with avocado slices, cheese, sour cream, or jalapeños as desired.
