Healthy Homemade Blueberry Chia Seed Jam with No Added Sugar 🌱💜

Ingredients:
2 cups / 300g blueberries (fresh or frozen)
3 tablespoons / 36g chia seeds
1/4 cup / 60ml water
1 tablespoon / 15ml lemon juice
Optional: Pinch of cinnamon or a drop of vanilla extract

Directions:
1. Combine blueberries, water, and lemon juice in a medium saucepan.
2. Bring the mixture to a simmer over medium heat. Cook for 5-8 minutes, stirring occasionally, until the blueberries burst and the mixture becomes juicy. Mash some of the berries with a fork for desired texture.
3. Remove the saucepan from the heat.
4. Stir in the chia seeds and optional cinnamon or vanilla. Mix well.
5. Let the mixture stand for about 15-20 minutes, stirring a couple of times. The jam will thicken as the chia seeds gel. It will continue to thicken upon cooling.
6. Taste the jam. If you prefer it sweeter (depending on the natural sweetness of your blueberries), you can add a touch of stevia or monk fruit sweetener, but the goal is sugar-free.
7. Once cooled, transfer to a clean jar with a tight-fitting lid.
8. Store in the refrigerator for up to 2 weeks.

FRESH CUCUMBER LEMONADE
Ingredients:

2 large cucumbers, peeled and chopped
1 cup fresh lemon juice (about 4-5 lemons)
1/2 cup honey or sugar (adjust to taste)
4 cups cold water
Ice cubes
Lemon slices and cucumber rounds for garnish

Procedure:

1. In a blender, puree the cucumbers until smooth.

2. Strain the cucumber puree through a fine mesh sieve into a pitcher.

3. Add the fresh lemon juice and honey (or sugar) to the pitcher, stirring until well combined.

4. Pour in the cold water and mix well.

5. Serve over ice cubes and garnish with lemon slices and cucumber

Ingredients:

1 (15.25 oz) can whole kernel corn, drained

1 (14.75 oz) can creamed corn

1 (8.5 oz) box corn muffin mix (e.g., Jiffy)

1 cup sour cream

1/2 cup unsalted butter, melted

8 ounces cream cheese, softened and cubed

Directions:

Preheat your oven to 350°F (175°C) . Lightly grease a 9x13 inch baking dish.

In a large bowl, mix together the whole kernel corn, creamed corn, corn muffin mix, sour cream, and melted butter until everything is well combined .

Carefully fold in the cubed cream cheese, making sure it’s spread evenly throughout the mixture .

Pour the mixture into your greased baking dish.

Bake for 45–50 minutes, or until the top is golden and the center has set perfectly .

Serve warm and enjoy every creamy, comforting bite

Ingredients:
2 oz Tequila Blanco
1 oz Coconut Cream
2 oz Fresh Pineapple Juice
1/2 oz Fresh Lime Juice
Ice
Pineapple Slice (for garnish)
Lime Wedge (for garnish)
Preparation
In a shaker, combine tequila , coconut cream , pineapple juice , and fresh lime juice .
Add ice and shake well for 15-20 seconds.
Strain into a glass filled with ice .
