one pan lemony chicken sausage orzo 🍋 what you’ll need: 1 tablespoon avocado oil 12 ounces chicken sausage, sliced ½ small yellow onion, diced 2 cloves garlic, minced 1 cup dry orzo 2 cups baby spinach 6oz of sprinkle tomatoes (or mini, tomatoes) 2½ cups low-sodium chicken broth 1/2 cup half-and-half ½ cup freshly grated Parmesan cheese 1 teaspoon Italian seasoning Juice of 1 lemon ½ tsp salt ¼ tsp pepper Freshly chopped basil for garnish Instructions: 1. Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook for 3-5 minutes, stirring occasionally, until lightly browned. 2. Add the diced onion and cook for 2-3 minutes, until softened. Stir in the garlic and cook for 30 seconds, just until fragrant. 3. Add the dry orzo to the skillet and stir for about 1 minute to lightly toast and coat it in the oil and sausage drippings. 4. Pour in the chicken broth, add the Italian seasoning, salt, and pepper. Bring to a gentle boil, then reduce to a simmer. Cook, stirring often, for about 10 minutes, until the orzo is tender and the mixture looks saucy. During the last few minutes of cooking, add the spinach & tomatoes, stirring them in until the spinach has wilted and the tomatoes are warm. 5. Lower the heat and stir in the milk. Add the Parmesan a little at a time, stirring until melted and smooth. 6. Remove the pan from the heat. Squeeze the lemon juice over the top and taste. Add more lemon juice, salt, or pepper as needed. 7. Serve warm with extra Parmesan, cracked black pepper, and freshly chopped basil on top.

crockpot white chicken enchiladas 🤩

What you’ll need:

2 ½ lbs thinly sliced chicken breast
2 cans of diced green chilis, hot or mild
8-10 small tortillas cut into strips
2 cups Cheddar Jack cheese
½ cup shredded mozzarella cheese

For the white enchilada sauce:
3 tbsp butter
3 tbsp all-purpose flour
1 cup chicken broth
1 cup whole milk
½ cup sour cream
1 cup salsa verde
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp salt
1/2 tsp black pepper

Optional toppings:
Sliced jalapenos
Chopped cilantro
Extra salsa verde
Sour cream
Hot sauce

Instructions:

1. In a small saucepan over medium heat, melt the butter.
2. Whisk in the flour and cook for 1 minute, whisking constantly, until smooth and lightly bubbly.
3. Gradually whisk in the chicken broth and milk until smooth and thickened, adjusting the heat to maintain a gentle simmer.
4. Reduce the heat to low and stir in the sour cream, salsa verde, garlic powder, onion powder, cumin, salt, and pepper.
5. Remove from the heat once the sauce is silky, smooth, and thoroughly combined. When properly thickened, it should lightly coat the back of a spoon without immediately dripping off.
6. Place the chicken in the crockpot in an even layer, then sprinkle the diced green chiles over the top.
7. Pour the sauce over the chicken, making sure it’s evenly coated. Cook on low for 3½ - 4 hours, or until the chicken is fully cooked and tender. Check it at 3 1/2 hours as everyone's crockpot is different.
8. Shred the chicken directly in the crockpot, then stir in the tortilla strips.
9. Top with the cheddar Jack and cheddar cheeses, cover, and cook for an additional 10-15 minutes, until the cheese is fully melted.
10. Turn off the crockpot and let it sit for about 10 minutes to allow the sauce to thicken slightly. Top with your favorite toppings, such as hot sauce, sour cream, freshly sliced jalapeños, or cilantro. Enjoy!

garlic parmesan chicken meatloaf 👩🏼‍🍳🤌🏼

What you’ll need:

2lbs ground chicken (can also use beef)
1 small yellow onion, finely diced
4 cloves of garlic, minced
1 cup shredded parmesan cheese
1 cup of Italian breadcrumbs
½ cup milk
2 eggs
1 tbsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp pepper
1 tbsp Worcestershire sauce
1 cup shredded mozzarella cheese

For the sauce topping:
½ cup ketchup
2 tbsp brown sugar
1 tbsp dijon mustard
1 tsp Worcestershire sauce

For the garnish:
Freshly grated Parmesan cheese
Fresh chives, chopped

Instructions:

1. Preheat the oven to 375
2. In a large bowl, add the ground chicken, onion, garlic, breadcrumbs, parmesan cheese, eggs, milk, Worcestershire sauce, and all seasonings. Mix until everything is well combined.
3. Transfer the meat mixture to a greased loaf pan and gently press it into an even layer. Set aside.
4. In a small bowl, combine all of the glaze ingredients and mix well. Spoon a little over half of the glaze evenly over the top of the meatloaf, reserving the remaining glaze for later.
5. Bake for 40 minutes. Remove from the oven and spread the remaining glaze over the top, then sprinkle with mozzarella cheese. Return to the oven and bake for another 10 minutes, or until the cheese is melted and the meatloaf is fully cooked. Feel free to broil at the end to get the cheese golden brown!
6. Remove from the oven and let rest for a about 10 minutes.
7. Garnish with freshly grated Parmesan cheese and chives. Serve with mashed potatoes and your favorite veggie. Enjoy!

meal prep sheet pan breakfast burritos!! recipe 👇🏻

the best part about making these is the fact that you can sub pretty much any ingredient for something else that you like more! Dont like veggies? skip them! If you don’t like sausage you can add bacon, or even change what kind of cheese you put on top!

ingredients

10 burrito-size tortillas (I used Mission Carb Balance tortillas)
1 red bell pepper, diced
1 green bell pepper, diced
1 small sweet onion, diced
24 oz breakfast sausage, (chicken or pork)
Mozzarella cheese

for the egg base:
10 eggs
1 cup cottage cheese
Salt & pepper
Garlic powder

for the sauce:
½ cup Greek yogurt
¼ cup sour cream
¼ cup hot sauce (I used a green hot sauce - I love Yellowbird!)
Avocado oil spray

This can be stored in the fridge in an airtight container for up to 4 days, or you can place it in the freezer for up to 3 months.

to reheat: From the fridge, unwrap the burrito, wrap it in a paper towel, and microwave for 1-2 minutes, flipping halfway. From the freezer, thaw overnight if possible, then microwave for 2-3 minutes. In the oven, reheat in the oven at 350 for 15-20 minutes.
