🍳 The Recipe: Stacked Cheesy Mediterranean Vegetable Bake

Ingredients:
The Veggie Stack Layers:
2 medium zucchinis (sliced into thick rounds)
1 medium eggplant (sliced into thick rounds)
2 ripe plum tomatoes (thickly sliced)
1.5 tbsp olive oil, salt, black pepper, and dried thyme
The Cheese Filling Layers:
1 cup ricotta cheese (or goat cheese / cottage cheese)
½ cup shredded mozzarella cheese
¼ cup parmesan cheese (grated)
1 clove garlic (minced) & 1 tbsp fresh thyme/parsley (chopped)
Fresh rosemary sprigs for garnish
The Base & Sides: Cooked brown rice/grains, roasted carrot sticks, and roasted eggplant strips
Instructions:
Roast the Veggie Rounds: Preheat oven to 200°C. Lay the thick zucchini, eggplant, and tomato slices on a baking tray lined with parchment paper. Drizzle with olive oil, salt, black pepper, and dried thyme. Roast for 15 minutes until tender and lightly charred.
Mix the Herb Cheese: In a bowl, combine the ricotta (or goat cheese), minced garlic, fresh thyme, salt, and black pepper until smooth.
Build the Stack: In a small round baking dish (or directly on a lined tray), assemble the tower: start with a thick zucchini round, add a layer of herb cheese mix, top with an eggplant slice, tomato slice, mozzarella, and repeat the layers until you form a tall stack.
Cheese & Bake: Top the stack with a generous layer of mozzarella and parmesan cheese, and place a fresh rosemary sprig right in the center. Bake at 200°C for 12-15 minutes until the cheese is bubbling, melted, and golden brown.
Plate & Serve: Scoop a portion of the cheesy stack and serve hot next to cooked grains and roasted carrots/veggies. Enjoy the ultimate cheese pull!
