Winter Fav Recipe - Mushroom Curry Recipe - Creamy Mushroom Curry Recipe

Ingredients
250 gm Mushroom - chopped in desired shape
1/4 cup Onion chopped
1 cup Tomatoes chopped
1 Tbsp Garlic Paste
1/2 Tbsp Ginger Paste or Grated
2-3 Green Chillies
1 Tsp Cumin Seeds / Jeera
2 Tbsp Dhaniya Powder / Coriander
1 Tsp Haldi / Turmeric
1/2 Tsp Hing
2 Tsp Red Chilli Powder (or as per taste)
1 Tbsp Garam Masala
Salt as per taste
4 Tbsp Cream
2 Tbsp Kasuri Methi

Method / Steps to Recipe
1. Sauté Onions till brown in oil and Jeera as shown.
2. Then add Ginger Garlic Sauté till raw smell goes away and then add Tomatoes.
3. Add in Mushroom, Masalas listed above and water, cover and cook on low flame for 4-5 mins or as required.
4. Once cooked add in cream and cover and cook for a min and keep stirring.
5. Once oil separates from curry, add in Kasuri Methi.
6. Enjoy with Roti , Paratha or Naan.

Palak Paratha Recipe - Winter Roti Recipe - Palak Roti Recipe

Ingredients for Puree
1 bunch of spinach (around 500 gm or 1.5 lb)
4-5 cloves of garlic
1 inch ginger
1 cup Tofu or Paneer - I used Tofu
2 green chili
Salt - as per taste around 1 tsp
1 tsp Roasted cumin powder

Ingredients for Dough
2 cups Whole wheat flour
2 tsp Ajwain ( carom seeds - prevents any indigestion with spinach)
2 tbsp Olive or Avocado Oil
Ghee as required
Butter as required

Instructions ..
Add all the ingredients for puree in a blender and add water as required, so that it blends well .
In a bowl, add whole wheat flour, spinach tofu paneer puree, salt , ajwain , cumin and Knead the soft dough.
Make balls and roll with rolling pin .
Make roti and cook it on tawa from both sides, while applying ghee on top.
Top it with some butter and enjoy fresh.

Tip: you can always skip the frying part and make it like a normal roti.

Ghee Idli Recipe - Soft Idli Recipe

For Soft and Spongy Idli Recipe :
Ingredients:
* 1 cup urad dal
* 3 cups idli rice (or parboiled rice)
* 1/4 cup Poha
* 3 Tbsp Raw Rice - Sona Masoori for Example
* ½ teaspoon fenugreek seeds (methi seeds)
* ¾ to 2 cups chilled water (for grinding)
* Eno or baking soda
* Salt
Method:
* Add urad dal, Rice & methi seeds to bowls separately.
* Wash them very well until water runs clear. Soak them  in lot of water for at least 6 hrs to overnight
* After 6 hours, throw away the left over water blend it all and keep adding little by little water, blend separately and mix it all together once Dal batter is puffed and rice is coarsely blended.
* Once blended I usually leave the batter out for a day or two to ferment.(since the weather is always cold here)
* Once it raises and ferments, add some eno and salt, put it to idli steamer.

Gobi Aloo - Dhaba Style Aloo Gobhi Recipe

Ingredients for Aloo Gobi
2 Potatoes
1 Gobhi or Cauliflower Florets - Broken as shown in the video
1/2 Big Onion or 1 Small Onion - Chopped
1 Tbsp Garlic Paste
5 small Tomatoes
1/2 Ginger
2-3 Green Chillies
1.5 Tbsp Jeera (Cumin)
2 Tsp Coriander Powder
1/2 Tsp Hing
1 Tbsp Garam Masala
1-2 Tsp Red Chilli Powder (depends how spicy you want)
2 Tbsp Fresh Coriander leaves chopped (optional)
2 Tbsp Kasuri Methi - Crushed
Salt - As per taste

Recipe:
1. Cut potatoes and Cauliflower / Gobhi as shown and shallow fry them as shown.
2. Cut Onions and make a paste of tomato, ginger and green chillies.
3. In a pan add some oil and then add Jeera Cumin, then add in onions and let them shallow fry till translucent .
4. Now add in some Garlic paste.
5. Bring the tomato paste, add hing to it, salt and coriander powder.
6. Cover and let it all cook for 1-2 mins on medium flame.
7. Once oil separates, now add garam masala, Kasuri methi and red chilli powder if needed.
8. bring in fried aloo gobhi and add to the mixture.
9. Enjoy the dhaba taste at home of this amazing dish with Roti or Paranthi.

Ingredients:
* Leftover batter - I used Idli/Dosa Batter, you can also use Suji/Rava batter.
* 1/8 cup - carrot
* 1/4 cup - onion - finely chopped
* 1/8 cup - green pepper (capsicum)
* 1 Tsp ginger
* 1 Tsp garlic paste
* 2 Tbsp soya sauce
* 1 Tbsp Chilli Sauce (I used hot and sweet sauce)

Paratha Recipe - Paneer Paratha

Ingredients for Paneer Filling
1 Cup Paneer
1 Tsp Ajwain
1 Tsp Roasted Cumin
1 Tbsp Anardana or Amchur Powder
1.5 Tbsp Roasted Jeera Powder (Cumin)
1 Tsp Grated Ginger
2 Tbsp Fresh Coriander leaves chopped
1 Tsp Coriander Powder
2-3 Green Chillies
1-2 Tsp Red Chilli Powder (depends how spicy you want)
1 Tbsp Kasuri Methi - Crushed
Salt - As per taste

Recipe:
1. Mix and mash in all the ingredients and Paneer together.
2. Make a dough ball and roll one roti, keep it aside. Roll another one.
3. Add in some ghee on one side and then add Paneer mixture.
4. Cover it with another rolled roti on top and seal the sides.
5. Add some dry flour.
6. Roll a bit more.
7. Now place it on a hot pan, grease up with ghee or butter and
8. Make sure to cook it on medium to low flame. This will make your Roti Crispy from both sides and give that amazing crunch like Samosa.
9. Once done, butter it up and enjoy it with some achar or Dahi and with some chutney .
