The Etrog, also known as Citron, and is referred to in the Torah as peri eitz hadar, or, פְּרִי עֵץ הָדָר, meaning "fruit of the beautiful tree."

"And you shall take on the first day the fruit of beautiful trees, branches of palm trees and boughs of leafy trees and willows of the brook, and you shall rejoice before the Lord your God 7 days!" - Leviticus 23:40

The Etrog was grown extensively during the 2nd Temple Period and has been unearthed in many archaeological findings from the era.

The taste of Etrogim is similar to that of lemons, but is not as sour. It is not particularly sweet or flavorful as some people seem to think. It has a very thick rind and aromatic skin, though, many small sections, and LOTS of seeds. Some people use the etrog to make a very enjoyable sweet and tasty jelly over the holidays!
