One Pot Shrimp and Creamy Garlic Tortellini
Ingredients:
1 pound cheese tortellini (fresh or frozen)
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chopped yellow onion
1/2 red bell pepper, diced
1 (10-ounce) package of frozen spinach, thawed and squeezed dry
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon Italian seasoning
1 teaspoon onion power
1/2 teaspoon red pepper flakes
3 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for garnish
1/4 cup chopped fresh basil
Juice of 1/2 lemon
Salt and black pepper to taste
1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
Zest of 1/2 lemon
Directions:
In a large pot or Dutch oven, heat olive oil over medium heat. Add garlic and onion and cook until fragrant and softened, about 3 minutes.
Add diced red bell pepper and thawed spinach.
Cook for another 4-5 minutes, stirring occasionally, until the bell pepper is slightly tender.
Season with salt, pepper, onion powder, Italian seasoning, red pepper flakes.
Add the shrimp to the pot and cook for 3-4 minutes per side, until pink and cooked through. Remove the shrimp from the pot and set aside.
Pour in the chicken broth and bring to a simmer. Add the tortellini and cook according to package directions, usually about 3-5 minutes for fresh tortellini or 7-9 minutes for frozen.
Stir in the heavy cream, Parmesan cheese, lemon juice, sun-dried tomatoes and lemon zest. Mix well until the cheese is melted and the sauce is creamy.
Return the shrimp into the pot. Stir in the chopped fresh basil. Taste and adjust seasoning as needed.
Garnish with extra Parmesan cheese and a sprinkle of finely chopped basil.

1 can red enchilada sauce (10 oz)
1 bag cheese tortellini (20 oz bag fresh or frozen)
1 1/2 cups shredded cheddar-jack cheese blend
1/4 cup sour cream
1 tablespoon olive oil
1 small yellow onion, finely diced
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon oregano
1 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons minced fresh garlic
2 cups beef broth
1 can fire roasted diced tomatoes (14 oz), undrained
Fresh chopped cilantro for topping
Directions:
In a large deep skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned and crumbled. Stir in the diced onion and cook for 5 minutes until softened.
Season the beef with garlic powder, smoked paprika, cumin, chili powder, oregano, salt, and black pepper. Stir in the fresh garlic and cook for another minute until fragrant.
Pour in the beef broth, fire-roasted diced tomatoes, and enchilada sauce. Stir until combined
Add the cheese tortellini straight into the skillet. Bring to a simmer, then cover and cook for about 7 to 10 minutes, stirring occasionally, until the tortellini are tender and cooked through.
Uncover and stir in the shredded cheddar-jack cheese until melted and creamy. Turn off the heat and add in the sour cream to make the sauce extra velvety.
Top with fresh, finely chopped cilantro before serving.

Ingredients:
For the sandwich:
2 boneless, skinless chicken breasts, halved horizontally
1 tablespoon olive oil
1 teaspoon Salt
black pepper, to taste
1/2 teaspoon smoked paprika
6 slices of thick-cut bacon, cooked crisp
4 slices sharp cheddar cheese
6 slices hearty sandwich bread (like sourdough or country white)
4 leaves romaine or green leaf lettuce
2 tomatoes, sliced
2 tablespoons mayonnaise
1 tablespoon butter, for grilling
Directions:
Rub the chicken with olive oil, salt, pepper, and smoked paprika. Grill over medium-high heat for 6 minutes per side, or until golden and fully cooked (internal temp 75°C / 165°F). Let rest, then slice.
Lightly butter one side of each slice of bread. Grill or toast in a skillet until golden brown and slightly crisp. Remove and set aside.
Spread mayo on the non-buttered side of each slice. Layer as follows:
Bottom layer: Bread, lettuce, tomato, grilled chicken, cheddar
Middle layer: Bread (mayo side up), bacon, lettuce, more tomato

2 cups sponge cake or pound cake (cubed)

1 cup strawberries (sliced)

Maraschino cherries for topping

🔥🧀 Fried Cheese Stuffed Doritos
Ingredients:
1 bag Doritos chips (any flavor, ~9–10 oz)

8 oz mozzarella cheese, cut into small cubes or sticks

1 cup all-purpose flour

2 large eggs

2 tablespoons milk

Vegetable oil for frying (or any neutral oil)

👩‍🍳 Instructions:
1️⃣ Prepare the Cheese
Cut the mozzarella into 1-inch cubes or sticks (bite-sized).

Freeze for 15–20 minutes to help them stay intact while frying.

2️⃣ Set Up a Dredging Station
Bowl 1: Place flour.

Bowl 2: Whisk eggs with milk.

Bowl 3: Crush the Doritos into fine crumbs using a food processor or by sealing them in a ziplock bag and crushing with a rolling pin.

3️⃣ Coat the Cheese
Remove cheese from the freezer.

One at a time, coat each cheese cube:

Roll in flour (shake off excess).

Dip in egg mixture.

Coat in crushed Doritos, pressing to stick.

(Optional but recommended) Repeat egg and Doritos for a double coating.

4️⃣ Fry
Heat oil in a pot or deep pan to 350°F (175°C).
