Àmàlà is a local indigenous Nigerian food, native to the Yoruba ethnic group in the western states of the country. It is made out of yam, cassava, or unripe plantain. For this meal we chose yam, which was peeled, sliced, cleaned, soaked in hot water, dried and then blended into a flour, which is called elubo.

The combination of amala, ewedu, gbegiri and assorted meat stew is called abula. This mouth watering dish will leave you salivating for more.

Did you know? Across Igboland and among the Igbo's of Nigeria in the diaspora, the month of August, as it is now, is gladdened with the celebration of New Yam called iwa ji and iri ji ohuru.

We are getting rid of our old yam, to make room for the new yam coming next month. New Yam festival in Igboland of Nigeria or among the Igbo and their friends in Diaspora is always marked with pomp and pageantry. The breaking of the yam; and harvest is followed by thanksgiving. An offering is put forward and the people pray for renewed life as they eat the new yam.

How To Make Nigerian Suya With Yaji Pepper

There's nothing more tantalizing to our taste buds than the aroma of fresh BBQ!
Suya is the name given to skewered meat (mainly in Nigeria and Cameroon). It originates from the Hausa people, one of the largest ethnic groups in Nigeria and is the epitome of street food. The meat is marinated in a special "Yaji spice" and grilled to perfection. Although it is generally eaten alone, it can also be eaten with Garri(casavsa flakes) or with Agege Bread.
Suya is similar to the Kenyan dish "Nyamachoma" What's it called in your country?

Sudanese Samosa (Street Food)

Samosa's - Are tiny, crispier, crunchy, like a stuffed nacho filled with ground meat and cheese unlike the traditional Indian samosa's which have potato, curry, peas. The indian ones are thick and almost like a Sandwich, you are full after one or two. You can have 10 Sambuxas on the other hand.

They call her Samostess, the hostess with the most Samosas is the one and only provider of #Foodanese (Sudanese food/ cuisine) in New York. Sudanese born, Gladys Shahtou can wrap 400 mini Sambuxas per hour and says it's at least 10 Sambuxas per person at any event. For many of us some of the greatest influences for our love of cooking and food has been a mother figure. Several of my childhood memories include the breathtaking smell of cooking Ghanaian dishes.

My mom @homemadebyewurakua taught me that good food is about simplicity, fresh ingredients and a
lot of care and love. In fact, one of my favorite recipes from my mom is Kokonte with peanut butter soup. So light and simple but its how it is prepared,
cooked and garnished that makes it mouthwatering.

My weekends are mostly spent in the kitchen with my mother, helping to tackle her latest catering orders. Her touch is nostalgic and delicious and made with
love.
