Fish Mwambe is a classic dish from the 🇨🇩Democratic Republic of Congo formerly known as Zaire. Though this version is made with fish, Mwambe can also be prepared with beef, lamb or chicken. It is also considered as the national dish of the country and usaully eaten with fufu or rice.

Abacha also known as African Salad could be considered as a street food served in between meals, it originates from the eastern region of Nigeria specifically Enugu. Abacha and Ugba also known as African salad.🇳🇬

When people hear the name Abacha the first thing that comes to mind is the former Nigerian military dictator who died in office, but it's also the name of a delicious African "salad" that originates from the Igbo tribe of Eastern Nigeria. Its key ingredients are dried cassava flakes and Ugba (fermented oil African bean seed).

I'll never forget the first time I tasted Abacha. I went on a first date to a local restaurant in Warri, which is a town in the Niger Delta region. My date ordered a plate of pepper soup. I was feeling adventurous that day so I ordered a plate of Abacha. To my surprise it tasted so delicious. At the end of the dinner the guy claimed he had no money and couldn't pay the bill. I should have seen it coming, but that relationship only lasted a few months. However, I'll never forget that meal because it marks the beginning of my love affair with Abacha. My top five favorite Nigerian dishes :)

Dawa is considered to be 🇰🇪Kenya's national, beloved cocktail! Simple but refreshing for the country's tropic climate, we Kenyans hold pride the dawa beverage as it was birthed in Nairobi! Dawa's are a mixture of lime, vodka, honey, sugar and ice - varying in method of preparation from place to place depending on where you order it. Regardless, dawa's have a distinct and yummy flavor we enjoy wherever we are in Kenya!

I had my first dawa cocktail when I visited my dad in Nairobi two years ago. My dad and I would always go out to eat at a restaurant or get a drink or two together in Nairobi - he'd have a Tusker beer and I'd have a dawa cocktail. Even visiting the safari's in Masai Mara, dawas were a popular beverage drink among all the guests - nationals and visitors! During my childhood in Senegal Attaya was an important part of our social life because we had more time for conversation with family and friends. When my grandfather realized I knew how to make it he used to ask me to make it for my entire family. Today I’m a producer at the Ujamaa Black Theater. I live in Harlem, NY. I make Attaya sometimes, but it makes people want to sit around and gossip and I don’t have the time like I used to. I want to share my culture with the world. It inspired me to create Mawu Lisa Tonic Mawu Lisa, a natural supplement energy drink made from kola nuts.

I express my love for my Ghanaian heritage through food. Living in the Bronx so far away from home it’s important that my family connects to their culture and ancestral roots. I don’t know much about social media so my daughters helped me because they know that all of my food is homemade with love. I currently work as a home health aid but my passion for food sparked the launch of @homemadebyewurakua an online catering delivery company thanks to my wonderful daughters.
Someday I will open my own restaurant so I can share my passion for Ghanaian cuisine with more families but for now here is one of my favorite traditional dish 'banku with okra stew'. Enjoy!

When I would visit Kenya as a child, my grandma would always make sure there was a batch of bhajias for all of her grandkids with some Kenyan tea. You can’t go wrong with potato snacks! Rachel Naa-Du Laryea, having grown up in a traditional Ghanaian home where plantains were a staple; Fell in love and have been cooking them up in creative ways ever since. The name, Kelewele, is adopted from a popular Ghanaian street food comprised of diced plantains fried in savory spices and herbs - a favorite of her's over the years. Suya - Popular West African Street Food

There's nothing more tantalizing to our taste buds than the aroma of fresh BBQ!

Suya is the name given to skewered meat (mainly in Nigeria and Cameroon). It originates from the Hausa people, one of the largest ethnic groups in Nigeria and is the epitome of street food. The meat is marinated in a special "Yaji spice" and grilled to perfection. Although it is generally eaten alone, it can also be eaten with Garri(casavsa flakes) or with Agege Bread.
