Coffee Caramel Frozen Mousse with Espresso Brittle
☕️🍮 Delight in this luxurious Coffee Caramel Frozen Mousse topped with crunchy Espresso Brittle! A perfect treat for coffee lovers.
📝 Ingredients:
• For the mousse:
• 1/4 cup water
• 3/4 cup sugar
• 1 1/2 cups heavy cream
• 1/2 cup strong brewed coffee
• 1 teaspoon vanilla extract
• For the espresso brittle:
• 1 cup sugar
• 1/4 cup water
• 2 tablespoons espresso beans, coarsely chopped
• Additional whipped cream for serving
🔪 Directions:
1. For the mousse, combine water and sugar in a saucepan over medium heat, stirring until sugar dissolves. Increase heat and bring to a boil without stirring, until mixture turns a golden caramel color.
2. Remove from heat and carefully stir in 1/2 cup of heavy cream (mixture will bubble). Add brewed coffee and vanilla, and stir until smooth. Let cool completely.
3. Whip remaining 1 cup of heavy cream to stiff peaks. Gently fold into the cooled coffee caramel mixture. Pour into a container and freeze until firm, about 6 hours or overnight.
4. For the espresso brittle, line a baking sheet with parchment paper. In a small saucepan, combine sugar and water. Cook over medium heat until sugar dissolves, then increase heat and cook until it reaches a hard crack stage and turns amber. Remove from heat, stir in chopped espresso beans, and immediately pour onto prepared baking sheet. Let cool and break into pieces.
5. Serve frozen mousse with whipped cream and shards of espresso brittle.
