*Pepper Steak Stir-Fry with Crispy Fries*
_Better-than-takeout — bold, saucy beef + oven fries in under an hour_

*Steak Stir-Fry:*
1½ lbs beef sirloin, thinly sliced | 1 green bell pepper, sliced | 1 red bell pepper, sliced | 1 medium onion, sliced | 2 tbsp vegetable oil | 3 cloves garlic, minced | 2 tbsp soy sauce | 1 tbsp oyster sauce | 1 tsp black pepper | 1 tsp paprika | ½ tsp salt
*Crispy Fries:*
4 large russet potatoes, cut into fries | 2 tbsp vegetable oil | 1 tsp salt
*Instructions*
1. *Marinate beef* – Toss sirloin with soy sauce, oyster sauce, garlic, black pepper, paprika, and salt. Rest 15 min.
2. *Bake fries* – Toss potato fries with oil and salt. Spread on tray. Bake at 425°F / 220°C for 30–35 min until golden and crispy.
3. *Stir-fry* – Heat oil in wok/skillet on high. Sear beef 3–4 min. Add peppers and onion. Stir-fry 2–3 min until tender-crisp and glazed.
4. *Plate* – Pile crispy fries next to pepper steak. Serve hot.
*Pro tip:* Slice beef _against the grain_ while it’s slightly frozen for paper-thin strips. And keep that wok screaming hot — you want sear, not steam.
