Jalapeño Popper Macaroni Salad
Ingredients:
1 lb elbow macaroni
1 cup mayonnaise
1/2 cup sour cream
4 oz cream cheese (softened)
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup pickled jalapeños (chopped)
2 fresh jalapeños (diced, seeds removed for less heat)
1 tbsp Dijon mustard
2 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1/4 cup chopped green onions (for garnish)

Healthy and Delicious Street Corn Chicken Rice Bowl
Ingredients:
- 1 lb boneless, skinless chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Street Corn Mixture:
- 2 cups corn kernels (fresh, canned, or frozen)
- 1/4 cup mayonnaise or Greek yogurt
- 1/2 teaspoon chili powder
- 1/2 teaspoon lime zest
- 1 tablespoon lime juice
- 1/4 cup crumbled cotija cheese (or feta)
- 2 tablespoons chopped fresh cilantro
For the Bowl:
- 2 cups cooked brown rice or white rice
- 1 avocado, sliced
- 1/4 cup diced red onion
- Fresh lime wedges for garnish
- Additional cilantro and cotija for topping (optional)
Directions:
1. In a bowl, mix the diced chicken with olive oil, paprika, cumin, garlic powder, salt, and pepper.
2. Cook the seasoned chicken in a skillet over medium-high heat for 6–8 minutes until fully cooked and golden brown. Set aside.
3. In a separate bowl, combine corn, mayo or Greek yogurt, chili powder, lime zest, lime juice, cotija, and cilantro until well mixed.
4. Assemble the bowls: Start with a base of rice, then add the cooked chicken, street corn mixture, avocado slices, diced red onion, and garnish with lime wedges and extra cheese or cilantro if desired.

Garlic Parmesan and Potatoes…so good🙌🏼
1 bottle of Garlic Parm sauce (Buffalo wild wings)
2 packs of little potatoes (Little Potato Co. brand)
1 pack Chicken tender filets (8-10 filets)
8 oz. block of cream cheese
Smoked paprika
Minced garlic
Salt
Black pepper
1 carton heavy cream (pour into garlic parm bottle after you use the sauce)
Cook in crock pot on high for 4-6 hours😊

Creamy Chicken Lasagna with White Sauce 🍽️🍗

Ingredients:
- 9 lasagna noodles
- 2 cups cooked chicken, shredded
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 4 cups white sauce (see recipe below)
- 2 cups spinach, fresh
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning

Directions:
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large mixing bowl, combine the shredded chicken, ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
- In a baking dish, spread a layer of white sauce on the bottom.
- Place 3 lasagna noodles over the sauce, followed by half of the chicken mixture, half of the spinach, and a layer of mozzarella cheese.
- Repeat the layers: white sauce, noodles, remaining chicken mixture, remaining spinach, and more mozzarella cheese.
- Top with the final layer of noodles and pour the remaining white sauce over the top.
- Sprinkle grated Parmesan cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until golden and bubbly.
- Let it cool for 10 minutes before serving.

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish

Directions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, melt butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
3. Add the chopped mushrooms, thyme, parsley, salt, and pepper. Cook until mushrooms are browned and any moisture has evaporated, about 5-7 minutes.
4. In a bowl, mix the cooked mushrooms with cream cheese and mozzarella cheese until well combined.
5. Carefully cut a pocket into each chicken breast and stuff it with the mushroom cheese mixture.

A delightful appetizer featuring flaky twists filled with crab and pesto, served with a rich marinara dip.
Ingredients:
- 1 package puff pastry, thawed
- 1 cup crab meat (or imitation crab)
- 1/2 cup pesto sauce
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1 egg, beaten (for egg wash)
- 1 cup marinara sauce (for dipping)
- Salt and pepper to taste
Directions:
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface.
- Cut the pastry into strips, approximately 1 inch wide and 6 inches long.

Ingredients:

For the Chicken:

1 1/2 pounds boneless, skinless chicken thighs
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
For the Tzatziki Sauce:

1 cup Greek yogurt
1/2 cucumber, grated
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper to taste
For the Gyros:

4 pita breads
1 small red onion, thinly sliced
1 tomato, chopped
1/4 cup fresh parsley, chopped
Directions:

Marinate the Chicken:

In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.
Cook the Chicken:

Preheat a grill or skillet over medium heat. Cook the chicken thighs for 5-7 minutes per side until fully cooked. Let the chicken rest, then slice into strips.
Make the Tzatziki Sauce:

In a bowl, mix together Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper.
Assemble the Gyros:
