CREAM CHEESE CHICKEN ENCHILADAS -
Ingredients-
10 8“ tortillas made with flour.
1 medium Pkg. Of cream cheese, let it soften at room temperature.
2 small cans.Of .4 oz.Of green chiles
3 C.Of cooked chicken, shred it before using.
2 C.Of Mexican MIX cheese, grated.
2 C. For chicken broth, I used the low sodium version.
4 T.Of unsalted butter.
3 T.Of all-purpose flour.
1 small lime juice.
1 t.Of cumin.
1/2 t.Of chili powder.
1/2 t.Of Kosher salt.
1/2 t.Of freshly ground pepper.
For garnish: Fresh cilantro.
DIRECTIONS :
Step 1:
I gently greased a 9.13-inch baking dish with non-stick spray, and I preheated my oven to 350 degrees Fahrenheit.
Step 2:
In a mixing bowl, I whisked together half of the cream cheese, shredded chicken, 1 cup. Of cheese, lime juice, cumin, and chili powder, and I seasoned with salt and pepper.
Step 3:
Then, I took a tortilla and filled the chicken mixture with 3 tablespoons, then I put the seam side down in the baking dish. For the leftover tortillas and filling, I repeated the same step.
Step 4:
I melted the butter over medium-high heat in a medium saucepan, then I whisked in the flour and cook until browned, around 2 to 3 minutes.
Step 5:
Then I made sure to season with salt and pepper, then I steadily whisked in the green chiles and chicken broth. I stirred in the remaining 1/2 cream cheese afterward and I cooked until thickened, around 7 mins.
Step 6:
I removed it from the heat immediately and I added the green chili sauce over the enchiladas.
Step 7:
And I topped it up with the remaining cheese.
Step 8:
When done, I put the baking dish in the oven and bake for about 25 minutes, until the cheese and filling are melted and bubbly.
Step 9:
I broiled for about 5 minutes until lightly browned.
Step 10:
I took It off from the oven and enable it to rest for 15 to 20 minutes.
Step 11:
For garnish, I used fresh cilantro.

HEALTHY COOKIES
INGREDIENTS:
3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/4 cup almond milk
1/4 cup raisins or nuts
1 cup good dark chocolate chunks
1 tsp vanilla
Preheat oven to 350 degrees.
Mix all ingredients together and
Cook for 15 to 20 minutes. NO SUGAR! NO FLOUR!
Enjoy !

Someone asked about meatloaf last week or so. I mentioned that I make my meatloaf into patties because that’s how my mom always made it.
Here’s my recipe. One to 2 pounds of 80/20 hamburger, 1egg (2if 2 # meat), townhouse or Ritz crackers, diced onion and green pepper, salt, pepper, onion powder, paprika, thyme, sage, garlic powder, Ketchup(Half in the mix and half on top the patties)…Form into quarter pounder slightly larger patties. Put some thin amount of ketchup on top. Bake for 400° for 20 minutes. I put mine on aluminum foil to keep clean up a breeze.

Made this last night and it was really good so I thought I'd share it here.
Fajita Chicken Casserole -
Ingredients
4 cups shredded cooked chicken (about 3 large breasts)
2 cups instant rice
1 (10.5-ounce) can cream of chicken soup
1 cup sour cream
1 cup frozen diced onion and bell pepper blend
1 (10-ounce) can diced tomatoes with chilies (like Ro*Tel), undrained
1 1/2 cups chicken broth
1 (1.12-ounce) packet fajita seasoning
1 (8-ounce) shredded Mexican blend cheese (about 2 cups)
Instructions
Lightly spray a 9x13" casserole dish with nonstick cooking spray. In a large bowl, combine the chicken, uncooked rice, cream of chicken soup, sour cream, frozen onion and bell pepper, tomatoes with chilies, chicken broth, fajita seasoning, and about half of the cheese. Mix until well combined. Pour the mixture into the prepared dish and spread it evenly. Cover with tin foil and bake in the oven for 35 minutes at 350 degrees. Uncover, sprinkle the rest of the cheese on top and bake another 10 minutes

LOW CARB CHICKEN CLUB SANDWICH
INGREDIENTS
6 Lettuce Leaves (Iceberg)
6 oz Chicken Breast (cooked)
4 Slices of Bacon
4 oz Deli Ham
2 Slices Cheese
4 Slices Tomatoes
2 Tbsp Mayonaise
DIRECTIONS
1. Cook the bacon and warm up the cooked chicken. Then cut the 6 large lettuce leaves into square(ish) shapes.
2. Lay 2 lettuce leaves onto a plate and spread 1/2 of the mayonnaise onto it. Next lay the ham, chicken and cheese on top. Cover the meat with another 2 lettuce leaves and spread the other 1/2 of the mayonnaise on top of them.
3. Place the tomato slices and bacon on top of that. Cover with the last two lettuce slices, then poke 4 tooth picks or skewers into the middle of each of the corners. Slice the sandwich into 4, by slicing corner to corner.
This recipe makes 2 servings or 4 small sandwiches.

MY FAVORITE CASSEROLE
CABBAGE CASSEROLE
Spray baking dish with pam.
Cut up a small cabbage, put in the bottom of the pan. Cut up one vidalia onion, put on top of cabbage .
Mix one can of cream of chicken soup, one cup mayonnaise and 1/2 stick melted butter. Mix well and spoon and spread over onions .
Mix 1 stick melted butter, 1 cup of cheddar cheese and one sleeve of Ritz crackers (crushed). Mix good an put on top. Bake at 350⁰ for 45 minutes.
