Homemade yogurt cheese cake topped with organic matcha. It’s truly rich and smooth, but I didn’t do anything special, to be honest. I made yogurt by using Aomori-local Hagiwara brand milk and its yogurt as a starter. Then strained the homemade yogurt over a coffee filter set in a Hario V60 dripper. The lines of the cheese cake naturally came from the V60!

Watermelon matcha is my favorite summer quencher. I fell in love with the drink when I had it at the launch event of a couple of years ago. My version is a simple layer of watermelon puree and cold matcha. No syrup at all. Watermelon’s natural sweetness complements a pleasant bitterness of matcha green tea.

The first o-bon in my hometown Aomori in decades. Here is my attempt to make o-bon food for Day-1. Traditionally, the o-bon food should be plant-based. Also, it should have five colors (red, white, green, yellow, and black), incorporate five cooking methods (simmer, grill, deep-fry, steam, and raw), and express five tastes (salty, bitter, sour, spicy, and sweet). I hope my ancestors will enjoy my offerings.

45 years ago, your peaceful voice on the radio electrified a little girl living in a dormant small town in Aomori, Japan. That was the time I opened my eyes to the world and started dreaming of stepping out of the sleepy town. Thank you, Olivia. You are still my inspiration.

These pictures were taken about two months ago. They are a glimpse of my months-long relocation project from Brooklyn to Aomori, which is now a half way through. I am currently observing a 2-week mandatory quarantine in a hotel in Tokyo.

The red bowl, made by an American ceramicist Mark Shapiro, is a gift from my friend. I love the color, texture and a fingerprint of the ceramicist.

New York is scorching now. The extreme heat reduces my appetite, but I can eat this: cold udon noodles topped with pork & carrot kakiage tempura served with thin, cold sauce. I used carrot, carrot leaves and shio koji marinated pork for the kakiage. Enjoyed it a “bukkake” style!

A morning boost with a cup of sencha green tea from Sayama, Saitama Prefecture. I am a big fan of the robust and sharp flavor of teas from the region, especially when brewed at high temperature like 80-90°C (175-195°F). It’s hard to find teas from Sayama in New York, but carries them. This Yumewakaba cultivar also has a touch of sweetness obtained through the UV light exposure, which I learned from IGTV.

NY is scorching now. This homemade ruhbarb sorbet cools down my body and soul. It’s made with rhubarb sourced in Union Square farmers’ market, and I followed Claus Meyer’s recipe in “the nordic kitchen”. Since I could not find jaggery, I substituted it with honey.

Since I interviewed Tama-san for the cover story of NY Japion , I have frequented Farmers’ Market and eaten more seasonal vegetables, prepared in simplest ways. Sugar snap peas with miso cream cheese (photo 1 & 2) and turnip with tofu dip and homemade black bean miso (photo 3 & 4) brought the tastes of early summer to my table!
