Chopped Cabbage Salad no boring soggy salads over here!!!!!! Ingredients: - 1 cup chopped purple cabbage - 1 cup chopped green cabbage - 2 stalks celery - 2 green onions (or 4 mini ones) - 3 carrots - 1 mini cucumber - 2 tbsp parsley - 2 tbsp cilantro - 1 tbsp mint - handful sprouted almonds - topping — avocado, sesame seeds, flakey salt & pepper - 1 chicken breast (plus salt and water or chicken broth to cook) - + dressing* *Dressing — - 1 carrot - 1 nub of ginger - 1 tbsp tahini - 3 green onion tops - 1/2 lime juice - 2 tbsp coconut aminos - 1 tbsp rice vinegar - 2 tbsp extra virgin olive oil - 1/4 clove garlic - 1/4 clove shallot - 1 dash of toasted sesame oil - 1 tsp honey - salt & pepper Recipe: 1. Season chicken breast and add to a pot and submerge in broth or filtered water, bring to a boil then reduce heat and cover, cook for about 15-20 mins or until reaches an internal temp of 165 degrees, then remove and set aside to rest and shred when cooled 2. Finely chop all the veggies and herbs and almonds and add to a bowl 3. Blend all the dressing ingredients together, shake up any extra with water to get every last drop 4. Toss shredded chicken in with salad and dressing 5. Add toppings & enjoy
