Three tacos. Pastor. Birria. Carne asada. No toppings yet—just tortillas holding heat and memory. They handed them to me on a red plate, still hot from the grill. Burning through my fingers, but I held on. The trailer didn’t dress them. Instead, they set up a little table on the side. Cilantro. Onion. Salsa. Lime. You fix it how you want. And that—that—took me back. To the Mexican concerts. Late-night festivals. Us pulling up in the white taco truck, headlights cutting through music and dust. We didn’t ask people to fix their own tacos. We did it for them. Cilantro. Onion. Salsa. Lime. Every taco handed out with care. That was tradition. That was respect. That was our taco truck.
