Nutella Hazelnut Roll Cake 🍫🌰
Ingredients

For the Chocolate Sponge

4 large eggs, separated
¾ cup granulated sugar
¾ cup all-purpose flour
¼ cup unsweetened cocoa powder
1 tsp baking powder
¼ tsp salt
1 tsp vanilla extract
2 tbsp milk
2 tbsp vegetable oil

For the Nutella Filling

8 oz cream cheese, softened
½ cup Nutella
½ cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
½ cup finely chopped toasted hazelnuts

For the Chocolate Ganache

1 cup semi-sweet chocolate chips
½ cup heavy cream
1 tbsp unsalted butter

For Decoration

½ cup chopped toasted hazelnuts
¼ cup whole or halved hazelnuts
Extra chocolate drizzle, optional
Instructions
Preheat oven to 350°F (175°C). Line a 10×15-inch jelly-roll pan with parchment paper.
Beat egg yolks with half the sugar, vanilla, milk, and oil.
Sift together flour, cocoa powder, baking powder, and salt. Gently fold into the yolk mixture.
Beat egg whites until foamy. Gradually add the remaining sugar and beat until soft peaks form.
Fold the egg whites gently into the batter.
Spread evenly in the pan and bake for 12–15 minutes.
Immediately turn the sponge onto clean parchment, peel off the baking paper, and roll tightly while warm. Cool completely.
Beat cream cheese, Nutella, powdered sugar, and vanilla until smooth.
Whip the heavy cream to soft peaks and gently fold it into the Nutella mixture.
Fold in the chopped toasted hazelnuts.
Carefully unroll the cooled sponge and spread the filling evenly over it.
Roll tightly into one continuous Swiss roll, with the sponge and filling physically connected in a natural spiral from the center to the outer edge.
Wrap and refrigerate for at least 2 hours.
Heat the heavy cream until steaming and pour over the chocolate chips. Let sit for 2 minutes.
Stir in the butter until smooth and glossy.
Pour the ganache over the chilled roll and spread gently.
Cover with chopped toasted hazelnuts and add a few whole hazelnuts.
Refrigerate for 20–30 minutes, then slice.

Tip: Toast the hazelnuts at 350°F for 7–9 minutes before using. They add a much richer flavor and crunch.

¼ cup unsalted butter, softened
1 tsp vanilla extract
1–2 tbsp heavy cream, as needed

For Finishing

Powdered sugar
½ tsp cinnamon, optional
Instructions
Preheat oven to 375°F (190°C). Line a 10×15-inch jelly-roll pan with parchment paper.
Whisk flour, baking powder, baking soda, salt, and pumpkin pie spice.
Beat eggs and sugar for 3–4 minutes until light and fluffy.
Mix in pumpkin purée and vanilla.
Gently fold in the dry ingredients until just combined.
Spread the batter evenly in the pan.
Bake for 12–14 minutes, until the sponge springs back when lightly touched.
Immediately turn the hot cake onto a clean sheet of parchment dusted with powdered sugar.
Peel off the baking paper and roll the cake tightly while warm. Let it cool completely.
Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Add a little heavy cream if needed.
Carefully unroll the cooled cake and spread the filling evenly over the surface.
Roll the cake back up tightly into one continuous Swiss roll, keeping the sponge and filling connected in a natural spiral.
