how to make Briam, a Greek classic 💙

this plant-based Greek recipe celebrates seasonal summer produce, baking fresh vegetables in plenty of olive oil until tender, caramelized, and delicious.

herb-stripping bowl by

ingredients:
• potatoes
• zucchini
• eggplants
• fresh tomatoes (or canned)
• onion
• garlic
• fresh parsley
• oregano
• thyme
• salt + pepper
• olive oil (be generous!)

slice your vegetables, add everything to one baking dish with the herbs, seasoning, and plenty of olive oil. toss to coat, then bake until the vegetables are tender and golden, about 1–1½ hours.

finish with fresh parsley + serve with crusty bread to soak up all that delicious olive oil!!
