Can you make a good (not artificial) tasting icing/frosting without adding a pound of butter or sugar?

I’ve been working on these sweet corn cupcakes & know the easiest way to make them healthier is by manipulating the icing. Traditional frostings are made with lots of butter and sugar, two things that are extremely calorie dense and don’t have great nutrient profiles.

So, can you make a frosting that has some sort of productive nutrition in it?

Protein packed garlic bread bread 🤤

It’s your favorite part of garlic bread, it’s soft, has a great chew & best of all, has 8 grams of protein per slice!

Why two “breads” well… it’s a loaf of Garlic Bread, it’s not cinnamon raisin, or tomato oat bread, it’s garlic bread bread.

The protein comes from an enriched dough, made with whey & casein protein powders and Greek yogurt, an egg and egg whites. You’d honestly never know it was packing so much heat.

King of the Creami Court results are in!

Minnesota fluff holds on for a second consecutive week, while the other flavors fizzled out. I’ve found that freezing ingredients really dulls the sweetness of things, so I figured it would mute the blue cheese tang…

It did not, it just dulled the sweetness of the pears and balsamic glaze, so I was left with a pint of blue cheese ice cream 🤮

But hey, life is all about putting yourself out there, trying new things, and owning your failures.

We’ve got some *much* better flavors lined up for next week, see you Saturday!

Full Sunday of eating started out in Cleveland with a little breakfast on the go, before flying home to a chicken parm sandwich as big as my head & a juicy burger for dinner.

I made both the chicken parm & burger using bread/buns made from a protein enriched dough. I’ll post the recipes for both later this week, so stay tuned for those.

I’m working on an ad for a big company that’s sponsoring a big event, so made cookies for that video!

I only ever want my chicken parm sandwiches on Garlic Bread bread.

While the bread is made from a protein enriched dough, I wouldn’t necessarily call this a healthy sandwich. But damn it, it was good.

Welcome back to King of the Creami Court! Minnesota fluff looks to defend its crown against a handful of pretty experimental flavors.

I think pear blue cheese balsamic might give Minnesota fluff a run for its money, although Becca is not that excited about it 😅

I started doing these majority fruit creamis when my fat loss phase started at the end of April, and now that I’m almost done with it, we’ll start to phase baked goods back into the fold & that will reallllly start to make this an interesting competition.

Come back Tuesday to see if pear blue cheese balsamic can take the crown, or if Minnesota fluff can hold on for another week!

Healthier cinnamon rolls!

Most cinnamon rolls are loaded with fat & sugar. Which is totally fine for a once in a a while treat, but what if you could eat them more often than once in a while?

Mine are packed with protein, made with Greek yogurt, contain less sugar, less fat, and fewer calories than traditional bakery cinnamon rolls. You still get you that soft, fluffy, gooey center everyone wants while *actually* giving your body good fuel.

Protein packed dinner rolls anyone?

For 168 calories, and 11g of protein in each, the taste & texture absolutely stands up. Use them as buns, top sop up gravy, or with a nice bit of jelly, you’re definitely gonna want this recipe in rotation asap.

This dough recipe is extremely versatile & I’m excited to continue to experiment with it! Next on the docket is to egg wash and sesame seed the dough to make hamburger buns.

Protein packed cheddar & onion biscuit!

With a whopping 21g of protein in it, this might just be my favorite way to have a breakfast sandwich.

I’m not gonna lie, with two eggs, cheese & two pieces of bacon, this BEC kept me going pretty much all day. The best part is though, it didn’t leave me feeling sluggish at all.

The addition of Greek yogurt keeps the biscuit moist, without overloading the dough with butter. While there’s still some butter added for texture reasons, the swap makes these biscuits healthier without ruining their integrity.

We’ve got a new King of the Creami Court!!!

Minnesota fluff (pineapple pistachio vanilla) is an incredible flavor I had no clue I needed in my life. It’s rich and earthy, but also tart and tropical. You’re getting a different flavor through the entire bite. It’s phenomenal.

It didn’t just blow me away or knock my socks off, it blew my socks off 😅 I was so excited about the new king I had to have a little fun with this edit.

I’ve got a good handful of flavors I think might make a run at the throne, but I could see Minnesota fluff holding onto it for a while.
